Eating a plate of noodles or a bag of potato chips is no different than a candy bar. You have just cut way back. I would guess you don’t feel sleepy after meals like you did before.

That is Barbra Streisand. It is not what you eat which is a problem, it is insulin resistance brought on by eating from sun rise to bed time. I eat white rice and potatoes and pasta, and my blood sugar levels are back down to normal.
