The real Star Wars geeks think Luke might have become a Grey Jedi, whom straddle the light and dark sides.

Truth be told, Luke's already turned.
My recollection is similar. I don’t recall talk of how Mark Hamill would age normally to play the part of Luke Skywalker in the future. But I do distinctly remember that Lucas said that the first three movies were the middle part of a nine chapter storyline.

Lucas’ story on that has changed a LOT over the years. Sometimes it was the middle of a trilogy of trilogies, sometimes it wasn’t. Sometimes they were all already written, sometimes they weren’t. Honestly I think he was making crap up, the Episode 4 thing in the crawl was really just a nod to the serials he loved and were ripping off the movie. Way too much of the story makes no sense at all if he’d already written it. Like the siblings thing, and Darth Vaders name and position (it’s pretty clear in the first movie Darth is his first name not some title, and he’s totally subordinate to Tarkin not the Emperors #2 guy).
In the books Luke went Dark Side a couple of times, but he kept coming back from it. They also developed this idea in the Clone Wars TV show that there’s a 3rd way with the Force, a group that’s not all goodie 2 shoes Jedi zen emotionless and also not slightly crazy all emotion Sith, Grey Jedi. Of course none of that is canon anymore.
Luke has probably come to realize what incompetent boobs the Jedi were. They let a Sith lord hide in plain sight, Yoda and Obi-Wan both trained Jedi that basically destroyed the Republic, they used a slave army of clones that were so brainwashed they turned on the Jedi and destroyed them in battle, ushering in the Empire.

Bloom County took that on back in 1983. Funny, he was only off by a year (technically it was a prequels, not sequels): Jedi Knights don't wait 15 years for a sequel.
One of the great questions of SF: when there’s thousands of Jedi largely ruling the Empire in the open and 2 Sith hiding why in blazes would the Jedi want to bring balance to the Force? But the prophecy was right, Anakin knocked it down to 2 of each, very balanced.
I’m ready for Disney to have the entire Star Wars franchise be a dream by Anakin Skywalker followed by him waking up next to Padme.
Two surviving Jedi masters and possibly a third, Shaak Ti was left alive after episode 3 so there could be a final boss for the video game 'Star Wars the Force Unleashed'.
But video games are no longer considered canon.
Any number of surviving jedi are possible, Kanan Jarrus is a major character in Star Wars Rebels which is canon.

Ha, good one. One of my big criticisms is we didn’t get to see Vader jumping around in the suit killing dumb Jedi by score.
How about this question: Are droids slaves? They sure look like it, custom built slaves.

Much like any number of surviving Sith, but as all the Jedi and Sith that aren’t Palpatine and Vader are in hiding they don’t really count. And even though Vader and Palp are running the Empire they really aren’t all that Sithie about it, they never seem to be questing after anything or sacking temples, just the occasional force choke or lightning bolts.
I’ve had that discussion about the droids, in Clone Wars they had this story arc about slavers and Yoda got on his high horse and I’m all “wait what”, and brought it up to a couple of other nerds. By and large we all agree, yup droids are slaves and it’s kind of jacked up for the Republic to be all uptight about it while their protocol droids are translating their rant.
There are only allowed to be 2 Sith.
Star Wars Rebels got around this be creating 'Inquisitors', dark force users working for Vader and the Emperor.
Then there was Darth Maul who even though chopped in half and fell in a shaft at the end of Episode 1, came back in the Clone Wars and Rebels...but not as a Darth.
And now that Disney is making money by the mintload through these movies, you can be sure that there will be movies starring surviving Jedi.
I think Luke will come out of the closet after admitting to having an inappropriate relationship with an Ewok.
