Wife and I have been doing keto/Paleo for over a month, and it’s insane how much sugar is in our food. When you’re actually watching it and realize how much 3 tbsp actually is, it’s eye opening. We’re addicted to sugar in this country.
But, FWIW, I love me some IHOP pancakes too.

Darn right. I am also off the carbs and doing fine but I admit, I do crave them still. Especially pancakes and spaghetti, possibly my two favorite meals. I'll have to console myself with a big batch of buffalo wings tonight, I guess.
We’re on no carbs no sugar. I actually found a baking mix like bisquick that makes decent pancakes. Carbquick.
I make biscuits, pancakes, etc and use it to thicken stuff.
As one gets older, by in large, we all become less able to process the amount of sugar and carbs in the typical American diet. Breakfast is one of the most carb/sugar laden meals of the day. I skip or have vegetable juice anymore.
The why is that I eliminated meat, except for fish, from my diet and my A1C had risen to 6.2. I reversed it by eliminating sugars, most grains and starchy vegetables. I now only eat fish and carbs that are in non-starchy vegetables and my A1C went down to 5.0 in 30 days. My cholesterol has dropped from 225 to around 100.
