Welcome back JT! Glad your patient is doing much better. That soup reminds me of when my mother & I would go to Charleston for Spoleto & one of the big churches would serve lunches & their crab soup was so delicious. I would also order
a pimento cheese sandwich to go w/ it. I loved the old guys who would walk around with bottles of sherry & ask if you wanted a splash in your soup. Great memories.

That soup looks mighty fine!

LOL!

I lived for a while with a family from Mississippi; and the Pimento Sandwich was one of the staples at every party. I wasn’t crazy about them, but I gulped them down and said they were fine, because that’s what a lady is supposed to do ;-)

Lately I’ve learned that cheddar and jalapeno is much more to my liking!

Me & Yaelle were talking, CA’s drowning right now, and TX Sunday, to wrassle up rainy day menus.

Dishes you can easily eat while playing card/board games while cooped up? Really, really exotic fare to cook your mind off the sequester? Dinner and a Movie inspirations?

The Low Carb Taco Bake recipe is a gem.

Adding a variety of toppings---avocado, green onions, sour cream,
shredded lettuce and salsa---makes it seem like you cooked all day.

One of the saviours of low-carbing - especially when you’re trying to keep it under 30g - is tostadas, piled three inches high with meat, cheese, lettuce, some salsa, sour cream, black olives, peppers, etc. ‘Crunch’ is one of the things most missed when low-carbing. Use chicharones and romaine ribs to scoop up the fillings that fall off the tostada.

Or you could use the same ingredients to make taco salad, nachos, etc. One 5” fried corn tortilla has about 8 net carbs.

I’m going to have to try this recipe out. The Low Carb Taco Bake. It looks simple enough. Essentially, you spill the contents of an omelet onto a greased cooking sheet, heat for 20 minutes at 350.

You seperately prepare ground beef, onion, bell peppers and tomato. Saute till fully cooked. Drain and pour contents on top of your oven omelet. Throw any added cheeses or seasonings on top, bake it all for another 20 minutes, cool and serve.

I can see adding some crunched up corn chips and bacon bits on top of the whole thing, just to send out ‘warning alerts’ about a tasty dinner coming up soon. I think I have the jist of it all. Can’t wait to experiment in my laboratory (aka kitchen).

When I get home I’d like to make some large lima bean soup. I have the lima’s and ham and chicken broth and carrots and onion and garlic. Are there any other ingredients that would add flavor to the soup? No tomatoes nopa nopa nopa. Oh, and I also add a dash of Tabasco to it.

I think that's how the sandwich was invented.

We keep a lot of canned soup on board, in case of power-outage, because it's easy to heat up over sterno. We especially like the Soupman's Lobster Bisque, and lately I've been on a jag of 'Campbell's Slow Kettle Style Kickin' Crab & Corn Chowder Soup'.

Maybe not 'gourmet' fare, but there are a lot of canned soups that really are good, if you need something fast and easy, and even if you don't have power. I'm also a fan of Progresso's lentil soup.

This is a nice wintertime dish ..... it uses healthy sweet potatoes.

Tortilla Stack

METHOD brown lb grnd beef, chp onion, 4 chp gar/cl, cumin, chili pwder,
s/p. Add shredded sweet potatoes; cook 5 min. Offheat add chp cilantro.

ASSEMBLY Layer on sheetpan tortilla, 3/4 c meat mixture, 1/5 diced
tomatoes, 1/2 c shredded cheese; repeat w/ rest; top w/ shredded cheese.
Bake 400 deg 20 min, broil 2 min to freckle top. Cut into wedges.

SERVE w/ salsa verde, sour cream, green salad.
