“when the little creatures that inhabit it have become visable”
Milbenkase from Germany:
https://en.wikipedia.org/wiki/Milbenk%C3%A4se
“It is made by flavouring balls of quark (a type of soft cheese) with caraway and salt, allowing them to dry, and then leaving them in a wooden box containing rye flour and cheese mites for about three months. An enzyme in the digestive juices excreted by the mites causes the cheese to ripen.”
If you prefer English cheese, then the same at one time applied to Stilton;
https://en.wikipedia.org/wiki/Stilton_cheese
“We pass’d Stilton, a town famous for cheese, which is call’d our English Parmesan, and is brought to table with the mites, or maggots round it, so thick, that they bring a spoon with them for you to eat the mites with, as you do the cheese.”[
The article also notes:
“A 2005 survey carried out by the British Cheese Board reported that Stilton cheese seemed to cause unusual dreams when eaten before sleep, with 75% of men and 85% of women experiencing “odd and vivid” dreams after eating a 20-gram serving of the cheese half an hour prior to sleeping.”
I do not know if they produce the substances that cause you to live longer....
I had always figured that Casanova’s description of his favorite types of cheese just referred to the microbiology behind blue cheese rather than actually visible larger creatures like mites, but maybe you are right.
