Saturated fat is very necessary for healthy lung tissues. Avoiding starches and processed foods is more effective for weight control than fats.

In fact, adequate protein and fats are needed to signal the body that it has eaten enough, and allow fat burning instead of fat storage.

More and more is being learned about the body’s mechanisms, and actual studies published in the Journals of medicine and nutrition etc. have shown that the USDA pyramid was a turn down the wrong path.

The new guidelines have eased up on total fat, and eggs IIRC, but they defied the scientific advisory committee and kept their restriction of saturated fats. Real fats such as butter from grass fed cows are not the problem.

Fats made from highly processed and chemical processes are not healthy. Margarine with trans fats, oils such as corn oil and soybean oil are examples. Pure lard without all the additives is even healthier than these “manufactured” fats.

Olive oil made from pressure is ok. Fats in nuts are great. Clarified butter is good for higher temp saute etc.

Agree completely. I use butter mostly and olive oils sparingly. Probably should clarify some butter for cooking as well.
