Agree completely. I use butter mostly and olive oils sparingly. Probably should clarify some butter for cooking as well.
I’m going to experiment with that after Thanksgiving I think. Clarify some butter. If I wind up with some pork fat from roasts, I may trying some rendering to see if I can get some lard that doesn’t have chemicals.
It really does make the flakiest pie crusts, and the holidays is one time that I do make some sweets, though I don’t eat much of it due to the sugar and carbs.
I also like coconut oil for a few things.
