NATIONAL PANCAKE DAY – September 26

The table is set, the batter is mixed, the griddle is hot, and the butter and syrup are ready. This means you are prepared for National Pancake Day. This food holiday is observed each year on September 26.

You may not have time to make a pancake breakfast, but that is okay, pancakes make a great dinner as well. Pancakes can be served at any time and with a variety of toppings or fillings from sweet jams and syrups to savory meats and sauces.

There is archaeological evidence suggesting pancakes are probably the earliest and most widespread breakfast food eaten in prehistoric societies.

Pancakes are also known as flapjacks or hotcakes.

DANG! I didn’t know it was pancake day, or we’d have feasted this morning on other than scrambled eggs ‘n Toast.

I’ll do Blueberry cakes in the morning. Better late than never.

Cheesecake Factory Sunday brunch feature.......so delicious.

Lemon Ricotta Pancakes / buttered maple syrup / fresh sliced strawberry topping

BATTER Stir/combine 1-3/4 c flour, Tbl B/Powder, tsp K/Salt. Add to wet ing; fold in to evenly combine leave small lumps in batter); Do not over mix.

COOK Heat 1/4 tsp. of vegetable oil on a griddle or in a large non-stick pan. Using a 4 oz. ladle, pour the batter onto the griddle or into the non-stick pan, forming one pancake that is 6” in diameter. Cook 2-1/2 min (edges begin to dry and puff up; little air bubbles will start appearing over the top surface of the pancakes). Flip; cook done 1-1/2 min.

WET ING Add 2 Eggs, tsp Vanilla, 2 Tb Veg/Oil to 1-1/2 c Buttermilk. Add 2 c Ricotta, 4 Tb Sugar, 2 Tb Lemon Zest. Whisk gently stir/combine.

There was a place in the Outer Banks. ..ship’s wheel or something of the sort that had pancakes with the best texture. A little chewy but lots of air too, they were the size of dinner plates. I think I would roll the dice on blood sugar to have one more plate of those.

Good. I was going to write, and will write here, that in Israel, National Pancake Day is known as “Rachel Corrie Day”.

And every Israeli tractor made by Caterpillar has a pic of Rachel as its symbol.

I actually think that “Rachel Corrie Day” should be celebrated on “Flat Earth Day”.

I know that this is a grave subject but I can dig it. Can you?
