You just described El Modelo in Albuquerque. Strictly take-out. >90% spanish speaking clientelle with a few gringos in there for local flavor. During lunch there’s a long line that extends outside. The single serving orders are enough to split into two meals.
As a life long resident on the border Mexica s no longer know how to make Mexican food in the U.S.
There used to be (talking a quarter of a century ago) a great place on St. Mary's near the bus station. Usually packed at lunch. I went in one day, and the place was half empty but the service was slow. Just a few other people besides me and a couple of tables of border patrol agents in uniform.
Me, too. It’s Tex-Mex all the way. And don’t be serving me any black beans or rice. I’m hardcore. If it’s gonna be beans, make them pinto. And if your only salsa is mild, I won’t be coming back.
Especially if they are calling a Big Mac “El McNifico”. Actually saw that on the menu at a McDonalds in Brazil, so maybe it’s just a Portuguese thing.
Bland colors, lots of mildly bland sauces, beans and corn.
My ex and I used to complain about the quality of Mexican food throughout Arizona...and everyone there would insist that it was the real thing.
However, if one does as we do in CA, you spread Pico de Gallo (with chopped, fresh Serrano peppers) over all the traditional dishes with a light sprinkling of Cotijo cheese for effect...and you have culinary bliss.
I usually judge a good Mexican restaurant by the beans.

Real Mexican food contains no Orange cheese!
In California we call a restaurant with mostly Mexican customers “a restaurant”
because what they actually eat in their countries is vastly different from what we consider "their" food....
The best authentic Mexican food I ever had was at this little joint in Quantico, VA. What most of us think of as “Mexican” food is really American-Mexican food. Once you have some authentic Mexican, you will know the difference.
