Can you imagine the bill for drinks and dinner for 700 some people and their spouses?

In the small company I used to work, the last day or so before Christmas the president would throw a party at work. (They also had a formal Christmas party.) The president had one of those globes in his office that was a bar and we all would get into it for the afternoon. Good times.

For your potluck:

Guacamole del Rey

2 Panamanian avocados or 4 Haas avocados
1 medium white onion
1 or 2 (your taste) mature Roma tomatoes
2-3 dashes salt
1/4 tsp fresh ground black pepper
1 TBSP cilantro leaf, WELL-chopped
juice of 1/2 to 1 lime (depends on size
1/2 tsp fresh ground cumin
3 rashers good (i.e. not too fat) bacon

an Combine first 6 ingredients while frying bacon. Only a fork is used to mash/mix the avocado! We don' need no steenken' blender. Drain the bacon when cooked, then chop into very small pieces. Add bacon, lime juice and cumin and mix again. Cover w/plastic wrap and refrigerate.

10 min before serving, taste, and adjust spices if you like.

Simple recipe that usually vanishes VERY quickly. Recipe can be multiplied if desired.

Onion and tomato should of course be diced (sorry for omission).
