Cool picture! I had a lot of fun trying out the root powder! We don’t have much of a place in our house for plants, so I don’t try to maintain one indoors. But if I had a place for it, I surely would!
I use celery diced in most of my veggie sautee starts for soups and other dishes, but we seem to go in cycles. Sometimes we can’t keep it on hand, then other times I have to throw it away because it waited too long.
I also like to grab it for a quick snack. I always chop the stump off the celery before putting it into the fridge so I can get at it. It doesn’t fit well into my crisper either, so I usually place it against the side wall of the fridge and stack lettuce or other greens on top of it.
I use it for soup starter too. A handful of celery, carrot, and onions is the beginning of most all of the soups I make. However, with only 2 people, it takes forever to finish off the soup.
Now I can dehydrate it, but I still would need some fresh for tuna or chicken salad. I don’t like to eat it by the stalk, because it gets strings between my teeth.
