I've known Pearl my whole life. She's a corker. Her birthdays are major events. Willie Nelson's birthdays have nothing on hers. Music, dancing, food, friends and good times. Yes, she still cuts a rug. And drives, lol. The Weinermobile took her through her tiny town of Richland Springs, population 333, and the school turned out to wave.

I have several ancestors and family members who have lived past 90, and a couple past 100, and every one of them has eaten bacon and eggs almost every day of his/her life. Fat doesn’t make you fat. That’s all a big, fat lie, told by people who don’t want anyone other than the elite to eat meat (I’m on a rhyming spree!). Fat in the diet does not equal fat in the blood, or on the body.

My mother always calls leftover bacon grease a seasoning for beans, peas or just about any vegetable. The grease also keeps cornbread from sticking in that cast iron skillet. The crust on cornbread is really better too. Mom is 91 and had to give up her vegetable gardening three years ago.

Bacon is full of nitrites, it is healthier to eat unsmoked bacon. Trader Joes has a delicious Applewood unsmoked bacon that is a heck of a lot healthier than the regular stuff.
