This video is a bit long winded but dry meat canning is cooking the ground meat and canning it without adding the juices.

I’m not sure what the point of that is. I would think at least a little moisture would be needed or the meat would just be hard and brittle.

I’m not sure what the point is either.

When she’s scooping up the meat with the slotted spoon, there is some moisture still in the meat. Also, at the end 20 some minutes into it, you can see there’s liquid bubbling in the bottom third of the jar. She claims it retains more of a fresh meat texture than the full liquid jars but I’m thinking the top portion that is out of the liquid is going to turn dark or something. When she heats it up she adds a bit of water so, again, what’s the point? Apparently she got the idea from a Peggy Layton who is supposed to be a known food storage person.

FYI, remember when ice cream came in big 1.5 gallon buckets? It then became 1.25 gallons. Well, the 2013 size is now 1 gallon and 1 pint. Can’t tell you what new price is but I will bet my right arm it’s the same or higher. The size of the bucket is considerably smaller.

Lots of stuff is coming in slightly smaller packages lately. The cereal box just shrank about 5 oz. It is still the same lengh and width, but thinner. Lots of 1 lb cans of veggies are now 14 or 15 oz. instead.

You know it’s bad when they shrink the veggie cans! Even during the Nixon/Carter misery-index years, we still had a real 1 pound can of veggies!LOL.

I just finished re-organizing the pantry this morning and noticed I have a wee bit more room... again. When we remodelled many years ago, I made sure cabinets and shelves fit what they needed to fit. Either my storage space is growing or packaged goods are shrinking. We all know it’s the packaged goods that continue to shrink but cost more.

I noticed when I was still a kid that the amount my family spent on groceries per trip tended to stay the same, but the cart kept getting emptier. Now, not only is the cart so empty you can see through the bottom, but there are 2 or 3 shopping trips per week instead of one. And they still cost about the same.

Well, what to do with all that extra space? I am getting a lot of satisfaction from looking at the home canned stuff. I just might have to kick that up a notch.

I don’t like what I am hearing about all that stuff they line the cans with now, anyway. What I don’t grow successfully, I can always get fresh from the farmers market and either can, freeze, or dehydrate it. Wouldn’t it be great to never have to buy another can of food from the grocery store?

You are correct ansell2. Prepping isn’t just ‘STUFF’ it’s skills and knowledge ae well both of which will out last your supplies of ‘STUFF’.
***I agree. This weekend I had so much fun logging into the slingshot channel on Youtube and coming up to speed on the elements of how to make a weapon from just wood and a knife.

The only real requirement is to have the right kind of rubber, which is something I am going to be adding to my list of stuff to get. When they take your guns away, you’ll need a way to defend yourself.
