The plural of Thai is Thai, but yes you are correct, Thai know what to do with them. In fact they raise them in fish farms.

Barbecued snakehead, (aka mudfish,) (Pla Chon, ปลาช่อน,) are a common food item served by steet vendors in Thailand.

That’s a hell of a lot for a single fish. Beware the “invisible hand’ of the market according to Adam Smith.

The market value of snakeheads will probably give rise to a new industry—breeding them to sell to Maryland authorities.

Cheaper and easier in the long run than trying to catch them in the wild.

Imported frozen whole snakehead can be bought at SE Asian food stores. One importer is White Swan Brand located in Monterey Park, CA. The profit on buying them wholesale and selling them to MD would be hugh.

The yummy comes from the kifir lime leaf, the fresh Thai mint, Thai shallots, lemon grass, and Thai chilies. It may be a little too spicy for normal Farang (ฝรั่ง.)
