Both Alfredo recipes sound good. My wife’s favorite meal for me to cook for her on special occasions is a homemade Alfredo and pasta dish with grilled Mahi Mahi. She has also requested variations with grilled chicken breast pieces.

Breakfast this morning was hoecakes and turkey sausage patties. We used Paula Dean’s recipe for hoecakes. They were not as good as my grandmother’s used to be.
Tonight’s dinner is a spatchcocked chicken, unless it rains then I am not sure what we will have. ;) Guess I’d better do some thinking on this one as it looks like it probably will rain.
I have posited the chicken recipe here in the past.
Tomorrow’s dinner is the pub burger recipe in the new Cook’s Illustrated that came today. If we like it, I will post it.

posited should have been posted.
As for the rain it is definitely on the way, so we are having beer can chicken in the oven. The husband has to run out for a beer as all we have are expensive drinking beers and stout. Not wasting any of that on a chicken.

Garlic roasted potatoes and steamed green beans will accompany it. Blondies for dessert, I have 2 I bought at a bake sale yesterday.

My mom just gave me this recipe. I’m going to pick up the corn flakes and give it a try. She said they’re pretty good.

Chocolate Peanut Butter No-Bakes

1 16 oz. bag semi-sweet chocolate chips
1/2 C peanut butter
5 C corn flakes.

Melt the chocolate chips in a large bowl in the microwave. Add the peanut butter and blend well, then fold in the corn flakes.

Spread in a greased 9x13 pan.

It is rather gray and overcast today here in Oregon so we are having one of our favorite breakfast for dinner nights at my house this evening. (We also were able to pick up eggs, bread and bacon and apples really cheap this week). We are having french toast with maple syrup and powdered sugar, bacon and an assortment of both canned and fresh fruit to go with it.

Adds super flavour (well, assuming one likes garlic...)

Who doesn't like garlic?

I use lots of garlic in my cooking and so always keep a jar of chopped garlic, in addition to "real" stuff in the form of bulbs. I have to be super careful because my 12yo LOVES garlic and will take a spoon to the garlic jar if I'm not looking. She is also known to snatch a clove, always after I have it already pealed, and just eat it.

One of the best friends I have in this world simply can't stand garlic. I think it must be a genetic thing.

As for me, I'll have a little garlic root beer with my roasted garlic salad, and garlic ice cream for afters.

;^)

I think that you may use as much garlic as we do. The grocery cashiers look at us funny when they see our garlic. Same with onions, too.

I made Pigs In a Blanket yesterday. I used Bob Evans pattied sausage. I folded them over and shaped into a roll. Should have just bought the linked, but the patties worked. :) Also thinking of buying the large roll and adding my own seasonings so I can control the salt and sugar.

Fried the sausages while the dough was in the bread maker.

Dinner Rolls

3/4 cup milk, slightly warmed
6 tablespoons butter or margarine, softened
1 large egg, slightly beaten
3 cups bread flour
1/4 cup granulated sugar
1 teaspoon salt
1 1/2 teaspoons active dry yeast
Additional butter (optional)

Measure ingredients into bread machine in the order recommended by the manufacturer. Select dough or manual setting. When cycle is completed, remove the dough from the machine and either shape as desired, or wrap in plastic wrap and place in refrigerator for up to 24 hours. If refrigerated, let set out for about 45 minutes to an hour before using

The easiest shape to make is to just divide the dough into equal parts and roll into balls in your hand. Place on a lightly greased baking sheet. Cover shaped dough with damp cloth and let rise in a warm place for 20 minutes or until doubled in size. Bake in preheated 400°F (205°C) oven for 15 to 20 minutes. Brush tops with butter, if desired. Makes about 20 to 24 rolls.

When the dough came out I placed it into a sprayed bowl to prevent sticking, then divided the dough into three parts, still in the bowl. I divided each section into 6, one at a time. I did 18 because that was how many sausages I had. Came out exactly enough. I wore thin plastic kitchen golves, lightly oiled to prevent sticking.

When I pulled off a section from the third, I spread it out with my fingers and wrapped it completely around the sausage. I placed them on a cookie sheet covered with parchment paper and lightly dusted with corn meal.

I baked them at the 400 that the roll recipe called for. Mine were a more toasted brown instead of golden, but next time I will check them after 10 minutes. They were yummy and will definitely make them again.

Next time I will try them using the cheese smokey links. These should be a very good replacement for the canned croissants/biscuits that are full of trans fats that I used to get asked to bring to family gatherings.

Oh I should add that I let mine rise bit longer. I had thrown together a single layer yellow cake for strawberry shortcake and baked that while the rolls rose.

Our breadmaker bought the farm. I chased all over the internet and through several countries on the phone looking for parts. I finally got a real live American on the phone that told me they do not service any parts for it at all. So, we are without a breadmaker for a while, Due to medical expenses at the present time, it will have to wait a while before we get another. I told my wife that we would just have to make bread to old fashioned way.

I would like to make yeast rolls, but have not looked into it at all. I have too many irons in the fire right now to take time to research recipes. Do you or anybody else on here have a tried and true recipe for yeast rolls made without a bread machine?

I want to buy a bread machine, but in the meantime, I bought some Rhodes frozen dinner rolls to try. I read where you can just smoosh them together to make pizza dough too. I'll post results when I try it.

Meanwhile does anyone have any suggestions for a bread machine that doesn't cost too much?

Sorry to hear the bread maker bit the dust. I would imagine it would be cheaper to buy a new one than to repair it.
