A reversal on carbs
Fat was once the devil. Now more nutritionists are pointing accusingly at sugar and refined grains.
Most people can count calories. Many have a clue about where fat lurks in their diets. However, fewer give carbohydrates much thought, or know why they should.
But a growing number of top nutritional scientists blame excessive carbohydrates not fat for America's ills. They say cutting carbohydrates is the key to reversing obesity, heart disease, Type 2 diabetes and hypertension.

You are so right,I did the Atkins diet about 6 years ago and the carbs were the problem, once I got rid of most of them , I lost weight.(weight was my only reason for going on the Atkins)
Except they pushed hi carb diets for years....
When I eat pasta, I lose weight, other stuff and I drift upwards.

I went on a low carb diet many, many years ago after I read the good Dr. Adkins book.
I have never, ever felt hungry again. I was wasting my time counting stupid calories.
I’ll never forget a dear friend of my mine. At work, she was coming down the stairs and I was racing up. She asked: “How do keep so thin?”
My reply was: “I am hungry all the time.”
Soon after that, I discover Dr. Adkins.

My friend was not overweight. Unfortunately, I never asked her what she did to keep her weight down too. I was too hungry to think straight to ask her that question.
It’s not hard to limit grain carbs in meals. Plan your meals around protein. Grass fed beef, free range poultry. Then add veggies, cooked, and salads, and sweet or even white potatoes (if no weight problem) sometimes. Dessert is fresh fruit and a little dark chocolate.
It’d easy at restaurants, though the meat will be cheap and suspect, but it’s still easy to eat well without grains — skip all buns and breads, rice, pasta.
What is difficult is eating this way at fairs or other peoples picnics where you have no choice. Bring your own snacks like beef jerky and Larabars.
I do make my own pasta, from flour that I grind myself, so it's no so highly refined, and has a greater fiber content.
Generally, the extreme refining is done for a) shelf-life b) appearance. Health doesn't even come into the question.

I too experience a complete relief from reflux if I stick to a low-carb regiment.
I love Dreamfields. Not much more expensive than "regular" pasta, and doesn't have a nasty aftertaste like many low-carb items do.
Just watch the portion size and what you put on it.

I could like that! I drink a lot of beer and never put on weight but I have a fast metabolism.
I was watching a doctor give a presentation on this very subject a couple days ago, While all very technical it said the very same thing.
That turns out to be not true. The starches in grains must be denatured to produce sugars. For beer this is done with enzymes in malt.

To me, this is old news, by 25 years or so...
But I do eat more foods that I prepare from scratch (think killing chickens and pigs, and grinding wheat).

Well that’s my problem. Two six packs is more like it!
I make bread from ground almonds, ground sunflower seeds and wheat gluten. I make hamburger buns from wheat gluten and tiny amount of flour. I make waffles from wheat and oat bran and use sugar-free syrup. I have a terrific pecan pie recipe with no carbs. Ditto for peanut butter cookies. We make "mashed potatoes" out of cooked cauliflower with a little butter and sour cream. We are still living large and delicious, but very low carb.
Low Carb Luxury and the Dana Carpender cookbooks are great sources for delicious, easy to make low carb dishes.

I too love a good pasta. Hence, I don’t buy it.
There is suddenly some good news for us chocolate lovers...chocolate is now good for you. I purchase the one with the least sugar or no sugar....Yummy
