Adopting a low carb lifestyle has meant that Mr. RightField, who developed Type 2 diabetes 12 years ago has never had to increase his medication levels, and has never developed any complications from the disease. He doctors always remark about what a wonderful job he's doing with diabetes.

I make bread from ground almonds, ground sunflower seeds and wheat gluten. I make hamburger buns from wheat gluten and tiny amount of flour. I make waffles from wheat and oat bran and use sugar-free syrup. I have a terrific pecan pie recipe with no carbs. Ditto for peanut butter cookies. We make "mashed potatoes" out of cooked cauliflower with a little butter and sour cream. We are still living large and delicious, but very low carb.

Low Carb Luxury and the Dana Carpender cookbooks are great sources for delicious, easy to make low carb dishes.

We make pie crusts from almond flour too. On birthdays we love a fresh fruit pie, and we make it paleo.

Since we never eat grains (the kids still do), we do eat white potatoes sometimes with no bad effects. We love sweet potatoes too.
