Yes we did get some rain, but not near what you have been blessed with up north!
Very VERY cold here though...today it is cloudy and breezy, so far no rain.

By request:

Panko-Crusted Fried Cod
is a tasty way to use Japanese bread crumbs.
Six servings.

• 2/3 cup peanut oil, more as needed

• 6 fresh cod fillets

• Old Bay Seafood seasoning

• Pinch salt (optional)

• Fresh ground black pepper

• 3/4 cup all-purpose flour

(I use Tempura mix or half flour and half cornstarch.)

• 2 large eggs

• 6 tablespoons whole milk

(Water works just as well as milk.)

• 1 1/2 cups panko bread crumbs

Preheat oven to 200 F.
Prepare cookie sheet as above.

Scatter pinches of Old Bay and pepper
over both sides of fish.

Spread flour on dinner plate.

Whisk eggs and milk in a shallow bowl.

Place panko crumbs on another dinner plate.

Dredge fish in flour; shake off excess.
Coat on both sides with eggs and milk.

Dip egg-washed fish in panko,
pushing fish gently to embed crumbs.

Heat a heavy skillet (10 to 12 inches) over medium-high heat.
Add peanut oil. Place fish in pan.
Fry fish in batches until golden brown,
about 2 1/2 minutes on first side
and 1 1/2 minutes on other side.

Keep fried fish warm in 200-degree oven
until ready to serve, which should be pretty quickly.

As Day Is Extinguished

As the last drumbeats of the Sparrows wings
As the Evening’s decent into darkening night
As the voice of the zephyr softly, sadly sings
We feel so, the passing as the day takes its flight

There is a pause where a heart may catch
An awkward moment to feel the mortal coil
Where lives slip for a moment off the latch
That place where we are between life and toil

We pause and grasp a moment of soul deep grace
And renew the self for the next coming of day
We draw a breath and put a smile on our face
And continue towards that future still so oddly fey
