Trip to doc appt was uneventful. No rain there or back. There was a thunderstorm while in his office.
Marissa is fine; her tonsil is still swollen but no strep. He said just a viral infection. She can continue taking the antibiotics since she does have water in one ear and she has a tendency for ear infections.
Marissa finished her homework while I was fixing dinner. She in now taking her bath. Since I gave her a lousy dinner last night, I tried to do better tonight. :)
We had baked halibut, baby lima beans, raw baby carrots and fruit.
Hey, I enjoy fried spam once in awhile. I fry it and make a sandwich or serve it with scrambled eggs. I’m not fond of chipped beef on toast but occasionally I make hamburger gravy and serve it on toast or mashed potatoes. Is that country or what?
I will try to get back later; I need to finish up a couple of things before bedtime.

I hope Marissa feels better. My Late Father always enjoyed a plate of Spam and Eggs, it brings back memories.

Don't want any spam any way it's served, but put me in the camp that likes 'chipped beef' (Stouffer's Creamed Chipped Beef) as an easy lunch over wheat toast or a baked potato. I wouldn't know how to 'make' chipped beef any other way. LOL!
Speaking of the hamburger gravy, what comes to mind is when we lived in Louisiana, this wonderful Cajun woman used to prepare for us what she called "Rice 'n Gravy" - which was much MORE than gravy - everything begins with a roux - the hamburger browned and added to the roux 'gravy' and served over rice. Yummy! :)
