My big fat Greek turkey burger

If you're craving the flavors of a traditional Greek dish (spinach, feta, yum!), but the family is Jonesing for burgers, here's the perfect solution. Greek turkey (or chicken) burgers are quick, delicious, and ridiculously satisfying. Add further touches for a more elaborate burger if you wish (cucumber, roasted peppers), but for now, we've kept it at seriously simple level--without sacrificing tastiness. So pop in the Mamma Mia DVD, crack open a bottle of red, and enjoy.

Ingredients:

* Extra virgin olive oil * 1/2 of a small red onion, chopped * 3 cloves garlic (2 chopped, 1 crushed) - garlic powder can work here if necessary * 10-oz. box frozen spinach * 2 tsp. dried oregano * 1-1/2 lbs. ground turkey or ground chicken * 1 T. grill seasoning (like Montreal Steak Seasoning) * 1/4 lb. crumbled feta * 4 hamburger buns, rolls, or pita pockets * 1 C. plain yogurt * Juice of half a lemon * lettuce and tomato

Heat 1 tablespoon of olive oil in pan. Add the red onion and chopped garlic, saute 5 minutes. Remove from heat and place in a bowl to cool.

Wring out the thawed spinach in a clean dish towel. Add to bowl with onion; season with 1 tsp. of the oregano.

Add the turkey or chicken, grill seasoning, feta, and a generous drizzle of olive oil. Mix well then divide into 4 equal sections and form into patties.

Place patties back in same skillet and cook over medium-high heat for about 5-6 minutes on each side (or until browned on both sides).

Toast the buns - always better toasted!

Combine yogurt, crushed garlic, remaining oregano, and lemon juice. Spread some onto bottoms of buns (saving some to top burgers with). Place cooked burgers on buns and top with lettuce, tomato, and a dollop of yogurt.

I love turkey burgers. They’re great.

At one point I begged my wife to never buy ground turkey again. Turkey is not a substitute for beef. No! But this looks good, so I'm printing it out and giving it a try. It's not a simple "just use this instead of hamburger" thing, turkey seems to be the right choice here.
