How do you get the skin off tomatoes to make a spaghetti sauce?
I have gotten a bumper crop of tomatoes and made some awesome spaghetti sauce. With my first pot of sauce, I made the mistake of not skinning the tomatoes first.
Drop them into boiling water for a few seconds. Then, plunge the tomato into ice water. The peels should slip right off.
I canned over 100 quarts last august.
I use a slotted spoon to dip them out and then let them ‘maters cool off completely in the ice water.

Instead of peeling the tomatoes, try blending the sauce in the pot with a hand blender after it has cooked down a bit.
Makes a nice smooth sauce without the tedium of blanching and peeling tomatoes.
LOL This is why my hubby is not allowed in the kitchen. He comes up with similar *shortcuts* :)
Freezing fresh is a good way to save tomatoes - but they will only be good for sauces after that. They get mushy once thawed.
Yes, there are a lot of vitamins in the skins. I do the same thing with apple skins when making Apple Crisp. I put the peeled skins in my food processer and then sprinkle over the apples before adding the crumble topping.

Quick way to peel tomato’s. bring a big pot of water to boil. Using the absolute sharpest knife you have, or a razor blade, put a X on the end opposite the stem.
Put in boiling water for 10-15 seconds and immediately place in ice water to cool.
Skin will peel right off.

I remember when my wife and I first married. She was trying to make her mom’s sauce (which is great.) I came home from work and she was peeling the tomatoes. This had been going on for hours, and I could see there were still several left. She was clearly frustrated and asked if I could help.
Being newly married, and thus willing to do ANYTHING to help, I said sure.
She left the kitchen for a few minutes. In the meantime I put some water in a glass bowl, got it really hot in the microwave, dropped in the tomatoes and then dropped them into the cold water.
All in all, the process took about ten minutes.
She cried when she came back.
Her mother never taught her how to cook. It was a shame.
Move to Texas tomato season is over in South Texas.

Oh, OK. I didn't know your season was so early.
Your right on the time...I would also split the skin with a paring knife if the skin was still a little tough...If the skin is not peeling well just dip for another 10 SECONDS.. Boiling them for minutes starts the cooking process and they can get too soft to peel
