Green papaya such as those shown in your picture are also tasty. Pitted sliced into pieces and cooked similarly to summer squash or zucchini.

I was once told that those soft as butter steaks at Ponderosa were created by injecting the lesser beef with papaya juice before cooking, which supposedly worked “naturally” like MSG and “predigested” the tougher beef fibers into more palatable fare. Any one know if this is true?
