There are people who love bacon, and then there are people who really, really love bacon . A recipe called Bacon Explosion is becoming viral, thanks partly to the New York Times whose story on the recipe currently ranks as the most e-mailed story on their Web site. The recipe has been so wildly popular that it's likely contributed to the downing of the page on BBQAddicts.com on which it's been posted. What is it? Take two pounds of bacon, weave it around two pounds of sausage and slather it with barbecue sauce. Four pounds of pork heaven ( see photos ).

From Wikipedia: Meatloaf is a meat dish consisting of seasoned ground meat (usually ground beef or a combination of ground beef with veal, lamb, or pork), which is formed into a loaf shape and baked or smoked. During the Great Depression it was popular to add cereal grains to the meatloaf to stretch the meat; the tradition lives on with the merits of producing a lower-fat dish with superior binding and consistency. It is normally served warm as part of the main course, but can also be found sliced as a cold cut. The meatloaf can be placed on a baking tray or in a mold, where baking on a tray yields a larger crispy surface area which is the favorite part of meat loaf to many. The result is usually shaped like a loaf of bread, but nearly any desired shape is possible.
I line a loaf pan lengthwise and crosswise with plastic wrap before lining with bacon. I use a 50/30/20 mixture of hamburger, pork, and veal. I soften the onions and bell pepper with salt and black pepper and cool before adding to the meat mixture. I do not cook the parsley and other fresh herbs. I use breadcrumbs made from my egg bread. If you want to add a small can of tomato sauce to the meat, add an egg to increase the binding power. I press the meat into the pan, fold over the bacon and wrap tightly with the plastic wrap.
Chill thoroughly, preferably over night. Turn out onto a rack set in a sheet pan and remove the plastic before cooking. This allows the fat to run out as the meat cooks. Cook at 350ºF to an internal temperature of 161ºF. If you dont have a meat thermometer/timer, buy one. They are about $15 at your local Megamart. Failing that, the meatloaf is done about the time the bacon starts to crisp. Let rest for 5 minutes before slicing. It makes great leftovers if there is anything left.

Turkey Bacon Triple Decker Sandwich
Treat yourself to a great sandwich when no one else is around to steal it...
2 slices whole wheat bread, toasted
¼ cup mayonnaise
3 leaves green leaf lettuce
1 large hothouse tomato, thinly sliced
3 slices turkey bacon, cooked
3 slices swiss cheese
1 Spread a thin layer of may on each slice of bread. Layer lettuce, tomato, bacon and cheese. Spread more mayo on top of the cheese. Repeat the layers twice more. Top with the second slice of bread.
2 Heat in the microwave for 45 seconds to 1 minute, or until cheese is melted.
3 Devour immediately.
Servings: 1
