Turkey Pot Pie Recipes (and other leftover treats)

If you are like many folks the day after Thanksgiving, there is a large amount of leftovers. Though our family has its favorites, it would be fun to find out how others create their after-Thanksgiving masterpieces.
So, what do you do with the: turkey, giblet gravy, mashed potatoes, stuffing, cornbread, sweet potatoes, cranberries, etc?

Since our boys are grown and Mom lives alone and doesn't cook much anymore, we send the bulk of our leftovers home in gladware.
We then strip out the turkey bones and boil up the skeleton and make turkey and homemade noodles. The kids will be back in a couple of days with empty gladware and we refill it and send it away again.

Me I just grab a fistfull of cold stuffing everytime I pass the fridge. ;) I can give up the rest but get off my stuffing!!

Generally turkey is the only thing left after Friday. Depending how what I feel like making, we could have turkey hash, stirfry, turkey noodle and vegetable casserole, spaghetti with turkey and lots of parmesan in the sauce or turkey tetrazzini. Shatever is left after that might be stewed down and the stock used for soup or stew.

We’re having turkey enchiladas with mole poblano tomorrow. Today we had, “Eat those mashed potatoes or you don’t get any leftover pie!”

I am making soup. Boiling the turkey bones and then I will dump in the remains of the veggie tray and the leftover corn and the last of the gravy.
Yummy.

We bought our first chest freezer and I plan to seal a meal the left overs in single meal size amounts.
Also want to make Turkey pot pie but have not looked up the recipe yet.
I am beat today so will get on it Saturday.
King Vanity supervised the whole Turkey cooking event from the shopping to the cooking.
That is why I am so tired he used a Martha Stewart Cooking Your first turkey recipe so it was quite a big job.
He got great reviews though.
I hope others post a lot of recipes for left overs.

Mix the leftover corn with the leftover mashed potatoes, pat into little cakes and fry until golden brown. Serve with catchup.

Well, I eat it bit by bit. I did make a really good coconut-acorn squash pie, though. It tastes even better after sitting in the refrigerator overnight.

We didn’t have corn. DP made some potato pancakes this morning, and several people microwaved leftovers with gravy. If there are any potatoes left tomorrow, Anoreth will eat them for breakfast.

Isn't that against the rules?
I love potato cakes. But there rarely are any left over smashed potatoes to use to make them.

We’ve never had corn at Thanksgiving. I’ve been feeling the urge to make chiles rellenos, though, and that requires corn.
Bill cooked a whole bag of potatoes, but by the time they were done, we’d already eaten two whole sweet potato pies I’d made, so we had a lot of plain mashed potatoes left over.

I like making a hearty turkey soup or a simple turkey salad sandwich. Nothing fancy.
I’ve been trying to find a good recipe for turkey chili, but it never tastes right and I would throw it out, so I gave up on that.

When I get down to the carcass I boil all the meat off, throw out the bones, save the meats and strain the broth. Then I concoct a huge pot of turkey soup using my grandmother's receipe for Greek style egg/lemon chicken soup, enough for everyone as they say.

Two acorn squashes, peeled, cubed, boiled until soft with 1 tsp salt, drained, then mashed.
Combine with 3 cups of sugar, 3/4 cup flour, 1 stick of melted butter, 2 eggs, 1 cup evaporated milk, 2 tbs vanilla. This will be enough for 2 pies. You'll use about half a pack of shredded coconut.
Spoon enough to fill pie half full, sprinkle half the coconut. Fill the rest of the way. Top with the rest of the coconut. Bake at 350F for a really long time with a piece of aluminum foil over the top to keep the coconut from browning prematurely. After a long time, probably over an hour. When the top puffs up and the center firms, take off the aluminum foil and wait until the coconut browns.
As I said, it's better after sitting overnight in the fridge.
