Armalites are the hondas of the CAR-16 world. They are nice and work.
I’ve seen both of those recommended, but don’t own either.
A PTR91 might have been another option given you tastes.
Try www.gunsnet.net for a number of opinions.
What is your primary purpose going to be?
If it’s time to bury them, it’s time to use them. Just sayin

I have the PTR91 also, but can’t find the pictures...
After more than 25 years of Air Force experience, I don’t want another .223 in my hands.
Look into the “SASS” (Semi Auto Sniper System) models of the AR10 from various manufacturers.
If legal in your jurisdiction, get a suppressor.
FWIW: quality equipment ain’t cheap. If you have to pull the trigger, and what you expect doesn’t happen, you’ll wish you’d spent more (at least for another second, then you won’t care - ever).
The ACOGs are nice, from what I understand. An alternative is iron sights and $1,000. more ammunition.
I am picing up a Kel-Tec SU16 today.
It’s pretty popular and relatively insexpensive.
You can check it out here:

I live on a farm in the country, and it could be useful for many different reasons,
I agree!!!
I bought my DPMS .308 earlier this year, just in case.
That is the exact scope that I purchased. It’s a very impressive scope, no doubt, but I don’t have any experience with other tactical scopes to compare. If you wear glasses, like me, my understanding is that you probably want cross hairs like this one instead of a red dot type scope. Maybe it’s just me but I can’t see those red dots.
My DPMS rifle has a 20 inch barrel and it is surprisingly heavy. I might have considered a 16 inch if I had known that.
Have you considered getting the model with the detachable handle? I think the top handle on that one is fixed.
Something to consider: magazines. The AR-10 being .308, are the magazines interchangeable with the M-14 or FAL ?
If the AR-10 uses proprietary mags you’re going to pay through the nose for them and in a crunch won’t be able to find any. If that’s not a concern for you, cool. If it is, maybe you might want to consider a Springfield Armory M1A or the FAL. I have an AR-15 and an M1A mostly because of the commonality of parts with what the military uses.
Just my two cents.
What I’m waiting for delivery on:

Saiga 12 with a 20 rnd drum and a couple Fuzzy Bunny 10 rnd Mags...
I want to keep it short in length for use in urban areas.
Can you get an AR-10 with the full stock? A full bore rifle like that deserves good sturdy furniture.
AR10s are proprietary mags. Right now the HK912/PTR91/Clone/CETME have the cheapest mags followed by the FAL...
