My suggestion on making perfect tender brisket....
Step 1. Find an old man with no teeth.
Step 2. Let him do the cooking.
Good one!

One of you FReepers should start a Big Green Egg ping list.
When you do, add me, please.

Is that close to Baytown? I’m visiting my girlfriend next weekend in Baytown.
To: SeaHawkFan
Yup, Baytown is about 20 miles down the road.

Well, we have already eaten the chicken, I have had a slice of brisket, you know , just to “make sure”. By the time I get done slicing it I doubt I will be hungry.

Is that what your screen name means?Oh God, no. I've got no use for Big Green Eggs, I'll stick to cooking over the indirect heat put out by a mix of a mesquite and pecan logs burning in the firebox of The Beast®
See The Beast at post #21
It's tx_eggman because eggman was taken. That's a nickname I picked up at a work sponsored hard boiled egg eating contest about 40 years ago ... just after the Beatles released "I Am the Walrus". Add to that mix the fact that the first syllable of my last name is egg and it stuck ... go figure

$1049 for the XL and it can handle two 20# turkeys. Also seems to be VERY EASY to keep clean. The large is about $750 and good for most needs.

I put it in plastic freezer bags to be used for those last minute guest You have leftovers?

Sure would appreciate it if some of you Texacans would put up a good Texas B-B-Q recipe for Texas rub and sauce, also you South Carolina boys with a low land mustard recipe

When I had my big pit, before someone stole it, I would do 5 or 6 at a time, always had BBQ when we wanted it.
