Very funny Grannie. The carrot cake is making my mouth water. I love carrot cake too, like I heard everyone talking about yesterday.

I’ll post the recipe for you. I wrote it out for Derrlak this morning.

Derly......you have Fmail, lol.

CARROT CAKE

Bake at 350 degrees

Mix:

2 C sugar 1 C oil

Add four eggs. One at a time.

Sift together:

2 C flour 1/2 t salt

2 t soda 2 t cinnamon

Add and beat 1 minute.

Fold in:

3 C shredded Carrots 1 C walnuts

Bake in ungreased pan for 1 1/2 hrs but check often with toothpick after 1 1/4 hrs. Will be very moist, but wait until top is set.

I buy the shredded carrots, and some are fine enough as is, but some I run through my small Cuisinart to chop more. Either way will work. I use a non-stick, large tube pan and it usually takes 1 hr 15 mins. I have also cut the recipe in half and baked in loaf pan, but watch the time on it.

Frost with Cream Cheese frosting.
