I have the GREATEST vegetarian spaghetti recipe. It's easy and it tastes wonderful. I got the recioe from Giatta Di Laurentis's "Everyday Italian" program.

Cook one large onion in olive oil in a large skillet. When the onion is transparent, add 1-2 tsp. minced garlic. Cook for one minute. Add one package of spinach or swiss chard and cook until wilted. Add 1 tsp red pepper flakes. Add one drained 28-oz can of tomatoes. Add 3/4 pound cooked drained spaghetti and toss with 1/2-1 cup Parmesan or Romano cheese, grated. Serve with extra cheese.

You miight want to salt this...I don't because my husband doesn't like much salt, and the cheese adds enough for him. We eat this a lot as we are trying to lose weight and avoid eating a lot of meat. It makes a great dinner with a salad and Italian bread.

looks good Jane. Will save & reference the program (maybe check the website. I love most ethnic foods)

Actually I am making spaghetti & the sauce is done. I like Italian sauces if they set at least a day. It is a marinara loaded with herbs & flavors.

I am also making (not done yet) a pasta dish w/bow tie. Garlic, olive oil, sun dried roasted tom, broccoli.

Salad, homemade bread & Banana splits will finish the meal

The number varies in attendance but upward to 20.

my mouth is watering thinking of that recipe. I love pastas. I would NOT be good with Atkins as I dont eat meat & LOVE most carbs foods

you are on weight watchers now?

Yes. It is the best way for me to lose weight. I can't do Atkins because it affects me poorly and I gain back all the weight as soon as I go off it, and I can't eat like that all the time.

With Weightatchers I can eat anything I want as long as I plan and compensate in order to keep my points level at my target. It also is the only diet my doctor approves of.

We are trying to avoid red meat and fats other than olive oil and fish oils. We don't do this 100% of the time, but I can say that my diet now is far healthier than it was 5 years ago.

I am putting together the information even as we type. :) I have heard from the church and from Poppyseed both and it doesn’t need anything much more. If we were going to order flowers, I would need some help with that, I think. But since the family is asking for donations, then each person can attend to that themselves. IMHO, it would be cool if it could be marked how we knew Kay, i.e., via FR and ATRW.

If someone wants to send a note to Herb, please send it to him in care of the church as I will not give his address over the internet.

sounds like a good diet. I think we should NOT remove things we really like, maybe just limit/moderate.

I am looking now at some “cleansing diets”.. These you are on a a few days.. maybe up to 3 or 4.

The harder ones that I MIGHT try, purge your kidneys & liver. But they are about 2 weeks or more in length.

Just like our computers do better when we get rid of virus. spyware & nasty registry “extras”, I believe our body is better if we periodically detoxify it. I have been reading about this for about a year but have never done it except that I do a LOT of water & sometimes go on one day water fasts.

Gotta get going.Will be gone a good portion of day & when here & need to be doing meal prep

Make sure this is really clear to us all Jemian.

WE will be sending a check TO the church for Kay but on the letter or bottom of the check have her name & your “work’s name?

I want to make sure it is right

Will you also post the name/address of the church for us?

I am familiar with her community. I did some commercial land sales there.. but that was a LONG time ago proly before she was there.

If you’re into mysteries(I prefer Tom Clancy, military history, or books on Catholicsm), might I recommend Martin Cruz Smith’s ‘Arkady Renko’ series? “Gorky Park”, “Polar Star”, and “Red Square”. He wrote a fourth one, I think it was called “Havana Bay”, but it wasn’t nearly as good.

The first three are brilliant ‘police procedural’ novels about a Moscow detective in the old Soviet Union and ends with the downfall of the Communists in ‘89-90. Like I said, it’s a very good trilogy.

Noted the titles, ABG. Thanks! Another book I picked up was Stephen King and Stewart O’Nan’s account of the Red Sox’s ‘04 season. Have you read that?

The only Stephen King novel I ever really liked was “The Stand”. I’m not really into the horror thing anymore. I read a few others, but the blood and gore(not Al) just kind of turned me off. “Night Shift”, which is a collection of his short stories, is also pretty good.

As for the Arkady Renko series, rent the movie “Gorky Park” first. When Siskel & Ebert first reviewed it, they gave it a thumbs down, but Ebert turned around and gave it 4 stars in his own review book. It helps to place a face and a demeanor on the characters. While the movie veers from the book towards the end, it’s still compelling, and you’ll see a few familiar faces: Lee Marvin(probably one of his last roles before he passed), William Hurt(very good as Renko), and Joanna Pacula(Doc Holliday’s girlfriend in “Tombstone”, though she doesn’t look anything like that in this movie).

Hurt’s performance is the best, because he tends to remind me of me. I’ll speak out on this board, but I’m more quiet in public. But like his character, I’m a bloodhound once I get a trail.

Every Renko book I’ve ever read, I’ve always placed his face to the character.
