One more recipe for you and then I think I had better turn in.
Almond Cake
1 cup marg
1 cup fine granulated sugar
4 eggs
Few drops vanilla or almond essence
1 5/8 cups flour
½ teaspoon baking powder
2/3 cup ground almonds
Flaked almonds to decorate
Preheat over to 350F
Cream fat and sugar then beat in the eggs and essence. Sieve the flour and baking powder and fold into the mixture with the ground almonds.
Turn the mixture into a greased and lined deep 7 inch cake tin (pan) and sprinkle with the flaked almonds. Bake for about 1 ¾ hours. Cool on a wire rack.
Serves 6 8
