I just made some awesome Sugar Free Hazelnut Truffles! I used Sugar Free Dark Chocolate candy melting wafers. I didn't read the instructions through, and did it differently, but it still worked out. The recipe says to take a 14oz. bag of melting wafers, and chop them up into bits. Bring 1/2 cup of heavy cream up to the boiling point, but don't boil it. Remove from heat and stir in the candy melts until the mixture is glossy. At this point, I added two cups of finely chopped hazelnuts. I put the mixture in the refrigerator until it was somewhat stiff. Then I formed little balls, and dipped them in some more melted sugar free dark chocolate, then put them in the freezer for the coating to set up. WOW are they good!! I used less than two pounds of the dark chocolate and 1/2 lb. of hazelnuts, and made 5 dozen of the truffles. Sure is more economical than buying Ferrero Rocher at what, $8.00 a pound? Even though it's not the same, it has a similar flavor. YUM!
I'm going to make some more for the kids for Christmas using the regular, not sugar free, dark chocolate.
