Spinach, Grapefruit and Almond Salad
This recipe serves: 6
Preparation time : 15 minutes
Cooking time : 10 minutes
Ingredients
For the vinaigrette:
1 tablespoon soy sauce
2 tablespoons fresh lime juice
1 tablespoon finely chopped shallots
1/3 cup olive oil
salt to taste
freshly ground black pepper
For the salad:
1/2 cup slivered almonds
4 cups spinach, cleaned and torn into bite-size pieces
1 grapefruit, peeled and sectioned
Cooking Instructions
For the vinaigrette:
1. Place all the ingredients in a container with a tight-fitting lid. Shake well.
2. Add the salt and pepper to taste.
For the salad:
1. Preheat the oven to 350°F.
2. Spread the almonds on a baking sheet and roast in the oven until lightly browned, about 10 minutes.
3. Place the spinach in a bowl and toss with the vinaigrette.
4. Transfer the dressed spinach leaves to a serving plate. Arrange the grapefruit sections on top and sprinkle with the almonds.
To roast whole, slivered, chopped or sliced almonds: Spread in an ungreased baking pan. Place in a 350°F oven and bake 10 minutes or until golden brown and fragrant; stir once or twice to ensure even browning. Note that almonds will continue to roast slightly after removing from oven.

Ingredients
1 teaspoon olive oil
1/3 cup finely chopped onions
1/3 cup finely chopped green or red bell peppers
1/3 cup finely chopped zucchini
1/3 cup finely chopped celery
1/3 cup peeled and finely chopped eggplant
1/3 cup chopped tomatoes
1 teaspoon chopped, fresh basil (dried is fine)
salt to taste
freshly ground black pepper
1 teaspoon red wine vinegar
1/3 teaspoon sugar
Cooking Instructions
1. Heat the oil in a skillet over medium heat. Add the onions and peppers. Cook for 2 minutes.
2. Add the zucchini, celery and eggplant. Cook 2 minutes more.
3. Add the tomatoes, basil, salt and pepper. Simmer about 20 minutes, uncovered. Let cool.
4. Add the vinegar and sugar. Adjust the salt and pepper to taste.
5. Serve cold as a dip with pita bread, crackers or tortilla chips.
Atkins Broiled Orange-Chili Chicken Breasts
Servings: 4
Prep time: 0:10:00
Bake/Cook time: 0:15:00

1/4 cup orange juice
2 teaspoons chopped garlic
1 tablespoon extra virgin olive oil
1 tablespoon chili powder
1 teaspoon granular sugar substitute
1 teaspoon grated orange rind
1/4 teaspoon cayenne pepper (optional)
4 boneless chicken breast halves, with skin (about 2 pounds)
salt and freshly ground black pepper
In a large resealable plastic bag, mix orange juice, garlic, oil, chili powder, sugar substitute, orange rind and cayenne pepper. Add chicken breasts; toss to coat. Refrigerate 6 to 8 hours, or overnight Heat broiler. Season chicken with salt and pepper. Position broiler rack 6 inches from heat source and broil chicken 12 to 15 minutes, turning halfway through cooking time, just until cooked through.

1 (8-ounce) container mascarpone, slightly softened
1 tablespoon granular sugar substitute
4 small mint sprigs and strips of lemon peel, for garnish
In the large bowl of an electric mixer, beat heavy cream on medium-high to soft peaks. Reduce speed to medium; add mascarpone and sugar substitute, beating just until smooth, 15 to 30 seconds. Divide and spoon the cream mixture into four parfait cups. Garnish with mint sprigs and lemon peel, if desired.

Friday morning, I stepped on the scale and saw 198 for the first time in quite a while.
Sadly, this past weekend was a scheduled getaway where I knew I'd be eating stuff that I hadn't been. Actually, I didn't too badly, but then when I got home there was a St. Joseph's Day pastry waiting for me . . .
Anyway, it'll be back under 200 by midweek, I'm sure. Next stop, 195. No, make it 190.

Actually, the "best" thing that I had at the Con Suite (sci-fi convention, dontchaknow) were some chocolate-covered pretzels. Dang these melted in my hands and I had to leave the room to wash up. 8-)

Well I'm finally going to start back with the same weight watchers point diet that worked well for me last year. This time I'm just going to incorporate more weights so I don't lose as much muscle.
Another suggestion is to totally avoid snack chips or anything else that is salted. Giving up carbonated drinks -even diet drinks - may help. That being said, I have also stopped losing weight after a 20 lb loss. It's been a month with no loss whatsoever. It's starting to *iss me off. I ate cookies last weekend for the first time in months. I guess I figured "what the heck". I'm gonna start over again and get back on the diet. We can do this!!
Plateaus are going to happen sometimes. The body is always trying to adapt. Change your routine (different diet and or exercises) and you'll start losing again.
I think you are probably right. I need to "outsmart" my body. :)
I like Amy's Kitchen products (www.amyskitchen.com) when I am at work. They are all organic and offer many special dietary options. Also many are very tasty.
The key is to constantly challenge yourself. When I'm not feeling beat after a workout I know it's time to turn it up.

Good advice for all of us!
I've been battling IBS for many years. If the Trim Spa has a stimulant in it, that's what made it come back, I bet.
About six months ago, my IBS starting hitting me harder than usual. One day, I didn't eat any wheat products all day and finally had a day that I wasn't sick. (lightbulb over head) The gluten in wheat has been aggravating my stomach issues and now that I'm not consuming any, I haven't been sick anymore. It's like a miracle.
You're right, gluten free products suck, except for the pastas. They are pretty tasty.
That and it keeps your metabolism up.
That is great. I am lucky that mine isn't as bad as some folks and I haven't had a flare up recently. My cousins wife has a severe case. She had a monster flare up at the end of 2004 into the summer of 05. She is about 5'2" and normally about 110-115 pounds. She went down to around 85 pounds. She looked like a skeleton. At Christmas she was back up to around 105 and looked so much more healthy.
Good grief, that poor woman. You'd think there would be more medications out there that would help people like her. I'm hoping for a product like "Lactaid" except called "Gluten-aid." I'm dying for a big cheeseburger with a greasy bun.
