Here's my recipe. It's NEVER placed less than 3rd place in a chili cookoff:
LIFE IS GOOD CHILI
(Approx. 12 cups)
Chile Pepper Sauce:
4-5 dried chile peppers (ancho, pasilla, chipotle, Anaheim, or New Mexico)
Combine peppers with boiling water to cover in bowl. Let stand for 30 minutes. Drain, reserving ½ cup liquid. Discard stems and seeds. Puree chiles with water in blender or food processor.
Meat:
1 tbsp oil
4 lbs. meat (ground beef, diced chuck, diced or ground pork, round, etc. inexpensive cuts)
1 lb. chorizo
Sauted Vegetables:
2 onions, diced
4-5 tomatillas, diced
1 green pepper, diced
Garlic
Liquids:
3 ½ cup broth
Beer (optional)
2 -4 ½ oz. cans tomatoes (include juice)
1 -15 oz. can tomato sauce
1 -6 oz. can tomato paste
Seasonings (to taste):
Chile pepper sauce (from above)
Chili powder
Cumin
Salt
Simmer for 45 minutes then add:
2 cans beans (pinto or kidney)
Simmer for an additional 20-30 minutes. Before serving stir in:
Juice of one lime
1 tbsp. brown sugar

My daughter was a great eater, my grandson has to be the pickiest kid on earth. My favorite story regarding my daughter's eating habits (which were great) was when her 2nd grade teacher asked each kid to tell the class their favorite foods, my daughter replied hers were escargots and bloody Mary's (she was allowed the celery stick in mine and that was a treat to her, but I promise I never gave her a real bloody Mary).

Well if you come to the CENTER of Texas then it's not far to most places, 5-7 hours at the most to the borders depending on what compass point you are headed to;)
You got as much time as you can spare.
Heck if we get everybody to come here then all you have to do is relax and enjoy the Hill Country.
Several Wineries are in the area.

If I come to the chili cook-off - can I stay at the compound? Let me know if this gets going, and I'll run it past the wife. I have National Guard drills the first weekend of each month, so those are out. I usher at church on a rotating basis, so I'll try to get a sub if this is on a Sunday.

got a bro in law that lives in Venus. When we go visit out there, I always take a good bit of green hickory "cooking wood".
I can build a fire in his grill and all the neighbors start showing up. Most, just cause they saw my pickup in the drive and they know there will be a brisket and some ribs on the pit pdq.
