I've had 'em served on sandwiches at parties (usually by people who think that's oh-so-refined. Personally I prefer chicken salad)

After I let mine sit several hours in vinegar, I use the cucumbers and the onion slices on sandwiches, the way other people use pickles.

Especially good on bulk or Polish sausage sandwiches. Yum!
