1 can coconut milk
Approximately 2 tablespoons curry paste. Rosie, if you don't mind, would you check what the curry paste is specifically called? I'm almost sure there's some in the door of the fridge.

Brown some onions, then add the coconut milk. When it starts to bubble, add the curry paste and stir until the liquid is uniformly one color. This color is usually pretty hideous but trust me, it tastes good. Add sriachi sauce - this is based on how spicy you want it. Add 2 teaspoons if you just want flavor, double or more that if you want spice. If you don't want to buy sriachi (I use it in lots of things, taco meat, even eggs, but you might not like it) you can just leave the curry alone.

Add the meat (chopped chicken, pork, whatever) and cook until meat is mostly cooked. Then add vegetables. I like peppers in this - mostly green, but if yellow or orange are on sale, throw some of them in! Cook until vegetables are to your liking.

Serve over rice. The curry is pretty liquid-ish, so you need rice to make it easier to eat.

Ok. Sounds good. I'll look for the paste at Albertson's. We're going here in just a bit.

Glad I had a big breakfast or all this food talk would not be helping the dieting...

Ok! I got all the ingredients...the jar is a little jar of paste called Thai Kitchen Green Curry Paste.

Gonna go to church for a bit for the Lord's Supper, then we'll come home and I'll make it. I'll let you know!
