You actually are right about the deli meat going gray IMO.
I see them still leaving meat in the deli that looks a whole different color than the never-opened stuff.

I was at an event where I watched 425 pound Reuben (named after a sandwich) had to crawl to the middle of a stadium and then had to climb stairs.
Looks like he was going to kick the bucket right there.
