My Guido --- Larry Guido --- claims he's a former NY wiseguy who went into the Witness Protection Program. They moved him to this little (population 8000) town in West Texas. But he missed his wife, so he outed himself, moved his wife to West Texas, and together opened Guido's Tearoom, Pasta House, and Social Emporium. You can get a great grilled cheese sandwich there.

I think your Guido could be a bodyguard, or a chauffeur.

You know, there was a large population of Italian-Americans in New Orleans.

FWIW, Evelyn MacKenzie Hubbard may be Scottish, but the story she's living in is crap.
