Hey, I've discovered almost carb-free pancakes, and not of the flax variety.

I had seen a recipe a long while back for ricotta pancakes, but since I don't like the texture of ricotta in a lot of stuff - didn't care for the ricotta dessert from the South Beach book, for one - I didn't try it. People said it was grainy if you didn't use a blender, and I didn't have one.

But now we do! And I had ricotta leftover from when I made the eggplant "lasagna" a little bit ago. So I tried 'em. And they're good! Rather on the crepe end of the pancake spectrum, but that's how I usually make mine anyway. I don't mind the super fluffy type once in awhile, but they aren't my favorite.

And these don't taste anything like the cheese. Weird. They were a tiny bit tricker to flip than regular, but I didn't actually break any.

Basic ingredients:
2 eggs - beat until fluffy
1/4 c. ricotta
1/2 tsp baking powder
dash vanilla
1/4 tsp cinnamon
1 tsp splenda

But I just threw it all in the blender. Doubled the recipe so I can have 'em a bit later this week. Had them with a bit of sugar free syrup.

Well, at least they showed a door at St. James Parish! The CNN talking head was standing in front of the school and showed a group of kids and parents behind them. I don't even think they interviewed the Bishop when he arrived. Maybe they'll show more later on, but I doubt it. I guess it's more important for CNN to show Soledad O'Brien continuing to yammer about the ineffectiveness of the federal response to New Orleans.

They taste like flour and milk ones, though. That's what's weirder to me. I was prepared to throw the stuff out if it didn't work right. But I'm pleasantly surprised.

Gonna get my stuff together and head to the Post Office, I guess. And then maybe drive to Catholic Charities. It's going to be too hot to walk in a bit anyway.

After that...guess I'll hit Radio Shack first. Unless someone has other suggestions?

I think there are recipes out there for healthy breakfast smoothies and such. I could do with that...

I'll have to do some hunting later and see what I can come up with!

Can I put you as a reference on the Catholc Charities form thingie?

I don't think they're actually going to use any of them - the lady said they aren't actually doing background checks too much, though on the form it says they do. But I figure it'd be nice for them to at least have one local person they could ask if they really wanted to.

You'd just have to keep quiet about what's in the freezer, of course.

Heh...

Well...part one of today's mission is over. The Post Office was a bust. From what they told me, to get any position, you have to take a test in your particular region, and then a roster is made based on the results of that test and people are hired as openings occur. They just had a test group at the end of July.

I asked when the next test was likely to happen, and she said "Oh, in about three years". I cain't wait that long...

She said they *may* test sooner for rural mail carriers...but that's not exactly something I'd wanna do. *sigh* It just seems like I smash into a brick wall whereever I turn.

I did get the Catholic Charities thing dropped off, and I'm going back next Monday to start. Kind of a long wait, but at least it's done.

And now I'm finishing coffee before walking to the mall to check out Radio Shack. Wish it was a full sized store...but I dunno that there are any full sized Radio Shacks that nearby. And maybe they do enough business that it doesn't matter.
