The deadliest raid on Coalition forces in Iraq occurred yesterday when a 122mm rocket struck a mess tent in Mosul. Twenty-two people are confirmed dead, including 20 Americans, and 66 are wounded--42 of these were American service members.

I've finished making the English Toffee and it's cooling. The Honey Baked ham is in the refrigerator and I ran out and bought gifts for my stepbrother and his gf. The wrapping is finally complete.
We're taking my parents out to dinner tonight and then will walk around downtown to enjoy the lights; thankfully it's warmed up here.
If anyone is having ham and wants an easy yet truly delicious warm fruit compote that goes well with ham, let me know. I'm looking at the recipe now and mouth is watering :-)

We had an assignment from our Asset Management people a month ago to prepare input for an agency capital plan. We were given nine days (calendar, not work) to complete the effort. Thanks to a data repository we keep we were able to pull off the effort and provided them with some 60 pages of data.
This they got near the beginning of the month.
Last night, they say they were really only expecting 5 or 6 pages from us, and what we provided was far too much, please whittle down.
Well, we did. The guidance provided still produces a 44-page document. We're checking final numbers now, but I think I will purposefully delay until tomorrow around 11:30 AM, just about the time when folks are starting to get released early for Christman, to deliver it,
...and I'll be sure to wish the requestor "Merry Christmas".
I'm snacking way too much as I'm making things but DO NOT taste this toffee until it's fully cooled. It's incredibly hot and make sure it's out of the way of children (and cats)!
English Toffee:
1/2 cup finely chopped pecans
1/2 cup and one Tablespoon sugar
2 Tablespoons water
1/2 lb. real butter
2 Hershey Milk Chocolate bars (without nuts)
Spread pecans on the bottom of an 8" PAN.
Melt butter in heavy skillet. Add sugar and water, stirring constantly. Bring to full boil over high heat and stir about five minutes until the mixture is a darkish carmel color.
Pour mixture over nuts. Carefully (so you don't burn your fingers) put broken chocolate bars over sugar mixture. Use a spreader and gently smooth out the chocolate. It melts on contact.
Set aside to cool (at least a full day, preferably two). Do not refrigerate to help along the cooling process as the mixture turns a funny white color. When fully cooled, break up pieces and viola!
Warm fruit compote
(Tastes better if made the day before) Excellent with ham.
29 ounce can peaches
29 ounce can pears
20 ounce can pineapple chunks
11 ounces can mandarin oranges
Stemless marachino cherries, 6 ounces
1/2 cup butter
3/4 cup packed brown sugar
1-2 Tablespoons curry powder
Drain fruits well for about an hour in a colander.
Arrange fruits in 2 quart casserole. Melt butter, mix with sugar and curry powder. Pour over fruits and bake at 325 for one hour.
Refrigerate and re-heat to serve.

This pineapple casserole tastes great with ham and is made by my brother's church and in their excellent cookbook.
2 cans large pineapple chunks, drained
3/4 cup crushed Ritz crackers
1 1/2 cup grated cheddar cheese
1 1/2 cup grated or shredded mozarella cheese
1 stick butter, melted
1 cup sugar
5 Tablespoons flour
Put drained pineapple chunks in large casserole dish (about 13 x 9). Mix sugar and flour and sprinkle over pineapple.
Mix cheeses and sprinkle over everything. Top with crushed Ritz crackers. Dribble butter over all. Bake 30 minutes at 350 (do not cover).
Serve with ham.

Some kids came by and are shoveling my walk. Although we are to get more snow, I thought it would help to get a start on the walk...hubby won't have time to do it all.
Enjoy them later; they really are favorites that we serve at a lot of parties.
Hope that snow stops by this evening and doesn't interfere with your family's Christmas plans.
Normally, in my kitchen, there are 4 military plus contractors. Today, it was just me and the contractors. We managed ok. Pretty smoothly, in fact. And I got all of the paperwork done before shift change. ;>)
