Good morning!

Very hot and humid here, too. And we have no air conditioning, no air circulation to speak of, and a heck of a lot of equipment putting out heat. *sigh* I'm self conscious in shorts, but there was no WAY I was gonna wear long pants today.

Morning! It's cool here. I think we may get a thunderstorm this afternoon. They're still constructing the road, so it took me forever to get to work. I shouldn't complain about a three-mile commute!

Three miles of doing a lot of waiting is still irritating.

We may get a storm by tonight...maybe we get yours after you're done with 'em? Use them gently...we could use a good storm! Maybe it'd cool it down...

I think you can expect the next disk in about two weeks. I'll let you know more when I know more myself.

Oh, yeah, and I'm happy this morning. Turns out my favorite manga - "Rurouni Kenshin" is going to be published at a rate of one a month, instead of one every two months. Maybe I'll get to read the whole thing before I finish my Ph.D. ksen, I don't know if you've ever tried manga, but Kenshin's my favorite... and it's at every bookstore, so it's easy to get a hold of.

Had this for breakfast...I was really craving chocolate, and this was better than most strategies for dealing with 'em...even though I ate both servings.

3 MINUTE CHOCOLATE CAKE

1/4 cup almond flour (1 ounce)
1 tablespoon cocoa
1/4 teaspoon baking powder
3 tablespoons plus 1 teaspoon granulated Splenda or 1/4 teaspoon liquid Splenda
2 tablespoons Smart Balance, melted
1 tablespoon water
1 egg

Mix the almond flour, cocoa, baking powder and granulated Splenda, if using, in a 2-cup glass measuring cup. Beat egg well. Stir in the liquid Splenda, if using, butter, water and egg. Mix well with a spoon or fork, making sure the egg is well blended. Scrape batter down evenly with a rubber spatula. Cover with plastic wrap* and vent by cutting a small slit in center. Microwave on HIGH 1 minute until set but still a little moist on top. (Mine took a little longer). Cool slightly and serve warm topped with whipped cream or cool completely and frost as desired.
Makes 2 servings

For the Atkineers - the place I got it from had this for carb counts
With granulated Splenda - 4.5 carbs each
With liquid Splenda - 2 carbs each
