If you don't like eggplant, I don't blame you. Cooked solo and it leaves something to be desired. However, if you try my air fried eggplant recipe you just might end up eating eggplant regularly like I do now. The big secret is Panko that imparts a fantastic crunchiness to the texture.

The skin of an eggplant is extremely bitter. I never leave it on. I cook it in many dishes.
