30 years should be our timeline with out Picard aging more than a week, maybe a month.

We are talking about the character. It has been thirty years since TNG.
In the show, he played a man that was about ten years older than Stewart. Picard was about 57 when he took command of the Enterprise. He commanded it until he was about 73 before he was promoted to being an admiral.
Picard takes place about 20 years after that,as I understand the premise of the show.

Kind of risky filming a series that stars a man who might die randomly during production. I remember Stewart all the way back to a minor role he did for Kenneth Clarke’s Civilization documentary series from 1969.
