In this video I demonstrate how to make marinade out of Achiote paste that will drastically improve the quality of your barbecue food, especially chicken. In fact, I have never been satisfied with the quality of barbecue chicken...until I barbecued chicken using Achiote.
It is very easy to prepare the Achiote marinade as I demonstrate in this video. It will greatly improve both the taste and texture of your food.
Brining:
1 tbsp kosher salt
1 tsp crushed thyme
Marinade:
3 oranges squeezed
2 limes squeezed
1 tsp kosher salt
1 tsp cummin
1 tsp crushed peppercorns
3 cloves crushed garlic
1.75 oz Achiote Paste

Well, it is a red dye, and would completely obliterate honest smoke ring, and, the garbage “BBQ” ribs and pork you get at cheap chinese takeouts — that red color is annatto. If you want your meat to be bright red, use annatto, but that won’t make it BBQ.

I suggest you try it because beyond affecting the color of the chicken it most definitely changes the taste and especially the texture. BTW, this is frequently used in traditional Mexican cooking.

I make a marinate out of: Some of the pastes, olive oil, garlic, black pepper and lime use, blend in blender and brush on chicken and cook...
I brush on chicken but then put the chicken in zip lock bags, add remaining marinade, and then let sit in fridge overnight.

Years ago I was able to buy bags of compressed almond shell charcoal for a buck at the Dollar Store. The aroma was very sweet which you could also taste in the food.

BBQ = Meat, smoke, heat, time.
The less of everything else there is, the better.
achiote is used to color white rice-mexican rice (spanish rice uses saffron and is yellow:)..turns out kinda orangish throw in some peas, onions cilantro etc... looks and tastes great
