I posted recipes yesterday for chocolate pudding cake, which is by its nature eggless. One person freepmailed and told me that a young relative is highly allergice to eggs and she was very happy to have that recipes. So, I figured that a thread with many eggless recipes may be useful to people with egg allergies, or those cooking for people with such allergies. Observant Hindus also do not eat eggs, and then of course there are vegetarians who for various reasons may not eat eggs.
So, in honor of the young relative who is highly allergic to eggs, here are two chocolate pudding cake recipes. I have more I can add when time allows, and no doubt other FReepers have some they can add.

My solace is that each sould is eternal, just the earthly vehicle “dies”. That doesn’t make their absence less painful but it gives me some measure of peace knowing that the person I love is still existing.

But IIRC the hershey recipe had some sort of coconut/nut topping.
We find that whey (drained from our homemade yogurt) can often serve as a substitute for liquids and eggs.
We don’t appear to have the Hershey cookbook anymore. It was the “chocolate lovers cookbook”. IIRC, the cake recipe fit in an 8x8 pan and was a pretty easy recipe.
Maybe some FReeper has that cookbook and can look it up...
The Shootist was John Wayne’s last movie. Its not a cowboy movie. Lauren Bacall gives a stellar performance. Even opie, Ron Howard was great.

Eggless baking is the trickiest as almost all baked desserts have eggs. Here is one banana bread recipe, for people like your great nephew who is also allergic to nuts, try chocolate chips (I hate them in banana bread but some people like them). Or chopped dates. I have 5 bananas sitting on my counter that are going to be turned into banana bread soon. I usually make a very large batch and freeze a lot of it. I used to write recipe articles and that is why some of these are kind of chatty.
Easy Banana Bread
Ever have too many ripe bananas on hand? Since bananas are a very nutritious food, it’s good to have plenty of them, but sometimes they decide to all get ripe at once. They can be peeled and frozen for later use, but since mine always turn brown and ugly in the freezer, banana bread can be the answer. Banana bread can be made with thawed frozen bananas but in my experience, it’s good to have at least some fresh ripe bananas in the recipe as well. I’ve made this recipe times 4, so it can be just doubled, tripled, etc and still works perfectly. Most banana bread recipes say to bake in a loaf pan, but a regular cake pan works much better for this - quicker cooking time, and there is no mystery about whether it is done all the way through. A plus is that if you do make a large batch of this, when it’s cool it can be cut into squares, wrapped up, and it freezes very well - a lot nicer than freezing plain bananas. This is sweet enough for dessert but not as sweet as many cakes. I like it served with canned peaches on the top.
Here is the recipe, double or quadruple it as desired, I usually at least double it and cook in a large rectangle baking pan.
Sift dry ingredients together:
2 c. flour (white or mix of white and whole wheat)
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon if desired
In another bowl mix:
1/2 stick softened butter
3/4 c sugar - white or mixture of white and brown
When the butter and sugar are well mixed, add:
1 c. mashed bananas (can be heaping cup)
Mix everything together by hand, no need for an electric mixer, with:
1/4 c. milk or water
2 t. vanilla
Then fold in:
1/2 cup chopped walnuts, pecans or raisins
Spread in buttered and floured baking pan - or use parchment paper - and bake at 350 (pre-heated) until done. It usually takes about 30 minutes, but ovens vary, and depends on type of pan, loaf pan takes longer.

I just went through my recipes for ones that might be useful. Most are ones I’ve used; a few are from friends who have used but I have not (yet?). Here is one from a friend, who makes it often. I think I will try making cupcakes with this one. I’m into cupcakes lately as DH likes to bring to the fire station.
White Wacky Cake
1 1/2 c. flour
1 t. b.soda
1 t. b. powder
1 c. sugar
1/2 t. salt
1 t. vanilla
1 T. white vinegar
5 T. vegetable oil or melted butter
1 c. LUKEWARM water (caps in recipe)
1. Turn oven to 350. Sift dry ingredients into a bowl.
2. Make 3 holes - pour the the oil, vanilla, and vinegar into the holes. Over that quickly pour the LUKEWARM water. Beat well.
3. Pour batter into a lightly greased (I would butter and flour it myself or use parchment paper), or double recipe for a 9X14 pan.
4. Bake at 350 for 30 minutes or until cake tester comes out clean.
NOTE: Recipe states pan does not need to be greased but I [friend] do it anyway.
This moist cake is delicious with fresh strawberries and whipped cream.

I have many, many more. I will post as I have time, so you can check back when you want. I have a delicious Christmans Pannetone (sp?) bread, usually has a lot of eggs.
Here’s my scone recipe. Usually scones have an egg, from recipes I looked up. Eggless but delicious scones.
In one bowl:
3 cups flour [I often use half white and half ww. pastry flour]
1 c. sugar
1 1/2 t. salt
4 t. baking powder
1/2 t. baking soda
Whisk together well
Chop up in little pieces into the dry ingredients:
1 stick of cold butter (not margarine!) and mix into coarse crumbles with fingers.
Note: If making non-sweet scones, cut way back on the sugar, to 1 T or so, try and see what works. In that case you can add grated cheese, preferably sharp, instead of dried fruit.
Then add 1 cup milk with optional 2 t. vanilla mixed in. Stir with fork until all incorporated. Divide into two halves, you may need to sprinkle flour on the dough to handle without stickiness. Shape into two balls, flatten with your hand in the pan to 5 to 6 inches, cut each into 6 pieces, and slightly separate or pull out wedges so they have a little space between them. Bake for 22 minutes and check for doneness on the sides, if need be bake a few minutes more.
Optional yummy additions: 1 to 2 cups of any dried fruits, nuts, or fresh fruit like blueberries to the dry ingredients after butter is mixed in If using frozen blueberries, sprinkle flour on them first to avoid the purple/grey effect.
I used about 1 1/2 cups of minced black raisins, dried apricots and walnuts. And 1 T. of grated orange peel*. Handle the dough gently. Can be brushed with milk and sugar sprinkled before baking to make sparkly.
*If using orange peel I recommend using only organic oranges as citrus fruit is sprayed and dipped into really strange stuff, not what you want to eat.
Should I keep posting eggless recipes, do you (or anyone) think? I have many more, if there is interest. Here’s one. Similar to chocolate cake, I made it the other day. I multiplied it times 3, because I always make to share.
Pre-heat oven to 350, and line a cupcake/muffin pan with papers.
1 1/2 c. flour
1 c. sugar
1/2 c. cocoa powder
1 t. b.soda
1 t. b. powder (if you have egg replacer, add 1.t for good measure)
1/2 t. salt
Sift into a bowl.
Mix together quickly:
1 c. milk
1/2 c. veg. oil (or melted butter)
1 t. vanilla
2 t. white vinegar
And quickly pour into the dry ingredients. Stir until well mixed and fill the cupcake/muffin pan. Bake around 20 minutes or until done. When they are cool, I like to make a plain icing with sifted powdered sugar and hot water, and drizzle on the top.

In a few minutes I’m going to type out my eggless version of Panettone, which normally has quite a few eggs. So mine is not “really” authentic, but it’s a good substitute and I often make about 6 or 8 smallish loaves for Christmas presents. Traditionally panettone has straight sides and a round top, as though cooked in a big can, but I just make round loaves and bake on cookie sheets.
I love it and I’ve had good feedback. Makes great toast.
