Keen on quinoa: Idaho Falls miller expanding quinoa processing, plans buckwheat facility

IDAHO FALLS — Local miller Jeremiah Clark plans to soon expand into a new Idaho Falls facility with the capacity to process up to 5 percent of the world’s quinoa supply.

Clark, owner of American Mills, LLC, contracts with 17 growers from American Falls through Ashton to raise his own proprietary variety of the nutrient-rich, pseudo-cereal crop. His quinoa fields range in size from 100 to 200 acres, and he’s already made Eastern Idaho the largest quinoa production region in North America.

He hopes to have equipment installed by the end of October to commence operations at his new quinoa cleaning and sorting plant, located at 2329 E. Endeavor St. behind the Idaho Falls John Deere dealership. The new plant will have 10 times the capacity of his current facility, where he’s still running his 2018 crop nonstop.

Clark has also been working with several growers from his Eastern Idaho network to establish buckwheat as a new rotational crop within the region. Buckwheat is an antioxidant-packed cereal crop that he plans to mill into flour for making noodles and other baked goods. It’s actually a broadleaf crop, despite the inclusion of the word “wheat” in its name.

The Japanese and Koreans eat a lot of buckwheat noodles.

I grew up in a German family and buckwheat pancakes were a morning staple on weekends. I still make them maybe once a month as a personal treat.

Am currently off of wheat. I developed a wheat allergy. But Quinoa? No thanks (gag) It’s rice or corn or potatoes or oats for me.

I make buckwheat blueberry pancakes for my Dad ... regular pancakes jack his blood sugar up but buckwheat doesn’t... and they are delicious.

Some younger (under 30) people I know like eating Quinoa.
The way they often use it seems similar to hominy grits.
I prefer my grits with salt, pepper and butter any day.
The quinoa seems to remain gritty and grainy, whereas hominy grits can become very soft and smooth.

Buckwheat and Quinoa have a great future in America with all the aging population getting into prediabetes or the full blown version.

When I got on a serious weight loss program in March because of a prediabetes blood test result, my worst craving by far was for pasta, B & Q fill that craving quite nicely and my lifestyle change has been remarkable-- down 45 lbs, more energy and even harder erections, among other things.

Quinoa can maintain it’s texture but isn’t all that gritty or grainy. It actually makes a nice rice or oatmeal substitute or addition. With some good protein and fiber plus ever essential amino acid, it’s a worthwhile alternative to some grains.

First and ONLY time I ever tried quinoa, I noticed that it was a staple of the Mayan diet.

After tasting it I said, "Now I know why the Mayans ceased to exist."

Quinoa is great despite its hipster fan club. I use it in place of rice. Also excellent by itself cooked with butter, salt, sprinkle of onion power, ground black pepper, and sharp cheddar cheese. Maybe this new processing operation will help bring down the price.

Before I tried a My Pillow, A buckwheat hulls filled pillow was the best sleep ever.

The hulls go flat after about a month and have to be changed out. The price for refills is absurd.

Hopefully this new mill will find some value added in selling hulls for pillows.
