Most misdemeanors have to occur in the presence of the officer for an arrest to be made. This would have probably proceeded by summons or warrant. The video doesn’t change anything.

Whoa! You sure you were a cop? I have been successfully arrested (and prosecuted!) for several misdemeanors, never committed in the presence of an officer.
I now doubt your backstory.
Even if the (now ex-)employee had never worked anywhere else in the past, why would he think it was okay to treat anyone that way? What's next? Will he start ramming cars and driving them off the road when he sees a bumpersticker he doesn't like? Best outcome for society would be for him to behave that way (on some other flimsy pretext) toward someone without so much patience and sense of humor.
So should I be a cowardly, pacifistic, pathetic, cowering, piece of crap like you and run away rather than standing my ground when confronted by evil like this sales clerk? Thank God that I don't have to count on the likes of you to "have my back" when push comes to shove in this country. Yes I’m sure I’m a retired LEO. There are certain misdemeanor theft offenses where you can be arrested without the theft being witnessed by an officer. In this case, if it(the assault) wasn’t done in the officer’s presence, you would have to proceed by summons or warrant.
My are you snippy. Is your default mode of argument ad hominem attack? In 71+ years including military service and 48 years of marriage I am very comfortable in my manhood. The store clerk you call “evil” is merely stupid and is not worthy of wasting my time on. The guy with the camera is not a hero but a bully. I equate him with those creeps who would ruin the meals of those with whom they politically disagree.
I finally watched this video. I thought I didn’t need to just looking at the headline.
