It’s Monday. It’s December. I believe that calls for recipes. I saw a couple of teases in the comments over the weekend, such as 3XLady’s pictures of Potato Candy – candy? With potatoes? We need a recipe! And MichellenotTHATone was bragging about making white chocolate popcorn – White. Chocolate. Popcorn.!! Recipe please!

For my part I want to harken back to our discussion on the November 21 ham and cheese sliders recipe post. Somebody commented that they are called “funeral sandwiches” in the South and I responded that in Utah the ubiquitous cheesy potato casserole was known as “funeral potatoes.” Behold, the very next day the Wall Street Journal ran a piece on just that delicacy: Utah’s Funeral Potatoes: A Classic Cheesy Casserole to Enjoy While You’re Still Alive. Due to their paywall I’ll post the pertinent parts:

I HAD NEVER heard of funeral potatoes before a chilly evening last year, when I sat down to dinner on the patio of Hell’s Backbone Grill. This idyllic farm-restaurant sits at the threshold of the Grand Staircase-Escalante National Monument, in the tiny town of Boulder, Utah. No one had died. But as Jennifer Castle, the restaurant’s co-owner and chef, served up tender half-moons of potato napped in cream and melted cheese, tears sprang to my eyes nevertheless.

In the cold, clear night, under a starry sky, we talked about the ways communities come together to observe rites of passage in this part of the country. Inevitably, there is a buffet….

In Boulder they do things a little differently. Only 250 people live in this town sewn like a cross-stitch into the billowing rock formations of south-central Utah. There’s Hell’s Backbone Grill; a gas station and store called Hills & Hollows Market; a motel; a gift shop; and not much else. When someone there dies, the whole town hears about it. When someone is born or gets married or moves away or sneezes, Boulderites know. And more often than not—when the moment is deemed sufficiently momentous—someone makes a hot casserole dish of funeral potatoes…

There are so many things one can do with potatoes, but in conjunction with cheese, cream and heat, the comfort factor goes through the roof. Little wonder, then, that funeral potatoes are considered crucial consolation and hold pride of place among Utah’s most iconic dishes, rivaled only by green Jell-O salad.

As an aside, green Jell-O is such an icon in Utah that the 2002 Salt Lake Olympics issued a highly prized Green Jell-O Pin. I managed to snag one.

Meanwhile, back at Hell’s Backbone:

Boulder’s town clerk, post office keeper and purveyor of fishing and hunting licenses, 72-year-old Judi Davis, told me the roots of the dish can be traced in the pages of Mormon Relief Society Cookbooks. Some of the greatest available repositories of American folk recipes, these self-published books have appeared regularly since the early 20th century, throughout the so-called Mormon Corridor running from Utah into Wyoming, Idaho, Nevada, Arizona and California. Collections of family recipes, they’re put together by members of the Relief Society, the all-female auxiliary of the Church of Latter Day Saints founded 175 years ago. Among the group’s many duties—in addition to teaching food preservation and essential crafts such as quilting—providing sustenance at funerals ranks high.

There’s more, but those are the most important parts, along with recipes for the traditional style made with frozen hash browns:

Keri Venuti’s Funeral Potatoes

TOTAL TIME: 1 hour SERVES: 6-8

1. Preheat oven to 350 degrees. Set out hash browns until thawed slightly.

2. In a small skillet over medium heat, melt 1 tablespoon butter. Add onion and cook, stirring frequently, until translucent, about 5 minutes. Remove from heat and set aside.

3. In a small saucepan over medium heat, melt 4 tablespoons butter. (Alternatively, melt remaining butter in a heatproof bowl in microwave). In a medium bowl, combine melted butter with cornflakes.

4. In a large bowl, combine sour cream, remaining butter and cream of chicken soup. Add salt, onions, grated cheese and hash browns, and stir to combine. Transfer mixture to a 9-by-13-inch baking dish.

5. Top casserole with corn flake mixture. Bake until crisp on top, 45-55 minutes.

Hell’s Backbone Grill Green Chile Funeral Potatoes

Active Time: 15 minutes Total Time: 1 ½ hours Serves: 6-8

1. Preheat oven to 400 degrees. Rub a 9- by 13-inch baking dish with butter and garlic clove.

2. In a small saucepan, gently warm cream over medium heat. Remove from heat. Shingle a third of the potatoes, alternating between Yukon Gold and russet pieces, on the bottom of the prepared pan. Top with ¼ teaspoon salt, ¼ teaspoon black pepper, ⅓ cup chiles and ⅔ cup warmed cream. Repeat with another third of the potatoes, salt, pepper, chiles and cream. Shingle remaining potatoes, remaining chiles and top with remaining cream. Top layer of potatoes should be poking through the cream so they can crisp in oven. Sprinkle remaining salt and ground black pepper over top.

3. Cover baking dish with foil and place on a rimmed baking sheet. Bake 30 minutes. Carefully remove foil and sprinkle cheese evenly over casserole. Continue baking until cheese is melted and golden brown, about 20 minutes.

Unrelated to funeral potatoes of any sort: the Grand Staircase Escalante that the author refers to is one of Southern Utah’s many National Parks. It’s not the easiest to navigate but contains some of the most memorable rock formations you will find anywhere, like “the wave,”

I don’t have a recipe to share today, but I would love to have a candied sweet potatoes recipe that doesn’t include marshmallows. Anyone?

Nice for a holiday breakfast

Yummy treats stuffed w/ cinnamon-y apples, drenched in caramel and icing. Uses convenient refrigerated cinnamon roll tubes. Straight from the oven, drench w/ icing and luscious caramel. Pull apart and munch--OK to lick your fingers!

FILLING Micro a min 5-6 diced apples, tbl brown sugar, 1/2 tea cinnamon, drizzle of lemon/juice (micro apples tender not mushy). ROLLS Press out thinly cinnamon rolls from 8-count tube; center w/ spoonful apple filling. Roll up lengthwise; cut three pieces. Tuck in apples. Place three pieces in each cupcake tin – cut side up. Bake at temp on pkg; JUST lightly brown. Remove to counter---drizzle tops w/ icing and Hershey's dulche de leche.

ICING Add bit l/juice to icing in tube.

Sweet Potato Souffle
Combine 3 cups cooked and mashed sweet potatoes, cup sugar, 3 eggs, beaten, 1/2 cup milk, 8 tablespoons melted sweet (unsalted) butter, tablespoon vanilla, 1/2 teaspoon salt. Pour into buttered square baking dish. Crumble Topping over. Bake Topping golden 20-25 min 400 deg. Serve hot.

Topping: Combine cup packed light brown sugar, 4 tablespoons cubed sweet butter, 1/2 cup self-rising cake flour, cup chopped pecans.

Same here....I refuse to eat marshmallowy sweet potatoes ....a horrid dish. How about using sweets in a dessert?

Sweet Potato Bread Pudding / Rum Sauce
From Zea Rotisserie and Grill, New Orleans. Dense sweet potato bread
pudding is almost cake-like w/ crunchy pecan topping, thick, sweet rum sauce.

METHOD In glass bowl, hand mixer 9 eggs. Slowly beat in 3 c sugar, then 3 tb ea pumpkin pie spice, vanilla. Beat in 1 1/2 c mashed sweets thoroughly, then 1/3 lb melted butter. Beat in qt milk thoroughly. W/ hands, mix in lb stale 1/2" French bread cubes, cup raisins. Cover/fridge overnight. Thoroughly stir, no white spots show (soaked bread breaks down w/ stirring); raisins are evenly distributed.

Pour into lightly buttered 13x9" baker. Lightly scatter and press 11/2 c pecans on top. Bake 275 deg til puffed; center custard is set 70-90 min. Cool on rack 2 hours before serving.

RUM SAUCE Heat to simmer 2 c light corn syrup, 1/4 c dark rum, 2 tbl vanilla. Offheat whisk in vigorously cup room temp butter. Hold on counter til service.

Pioneer Potato Candy / From Homemade Candy / Farm Journal, 1970

METHOD mix cup warm mashed potatoes, 1/2 tea salt, 2 tea vanilla; sift in cup unsifted conf;
stir/ combine; turns to liquid. Sift in 6 c sugar--cup at time--stirring to sugar cookie dough consistency.

Mold into ball, cover bowl w/ damp cloth; chill firm; form into little bars, return to fridge.

FINAL w/ fondue fork, dip into lb melted chocolate; roll in 2/3 cup chp or grnd salted peanuts
then wire-rack over parchment to drip dry. Plate and chill before serving.,

Title: VIRGINIA’S CHEESE BALL
Categories: Appetizers
Yield: 3 servings

2 pkg CREAM CHEESE (8 oz)
1 pkg CRACKER BARREL(extra sharp)CHEDDAR (10 oz)
2 tsp WORCESTERSHIRE
1 tsp LEMON JUICE
1 dash SALT & PEPPER
1 tsp CHOPPED/GRATED ONION
1 dash TABASCO SAUCE
2 T CHOPPED/STUFFED OLIVES

Grate cheddar (you can use any sharp cheddar) or run through a grinder for smoother consistency. Soften cream cheese. Blend the two together. Add all other ingredients. Blend well. Shape into 2 or 3 balls and roll in finely chopped pecans. May be frozen, and actually tastes better after freezing.

Best when eaten with TOWN HOUSE CRACKERS.

This recipe is one my Mother used for many years and I have been using it for over 40 years. I have yet to find anyone who doesn’t like it.

Get vegetables into your diet and satisfy cheesy Mexican cravings.
Do day-ahead; pop into oven next day. Creamy filling satisfies even the carnivorous.

Roasted Butternut Squash Enchiladas

PREP Roast butternut squash halves tender flesh side down on parchmented sheetpan 400 deg 40 min. Let cool.

FILLING Mash squash, 2 tb ea cr/cheese, chp cilantro, minced green onion, 1-2 minced canned
chipotles in sauce, 1/2 tsp cumin, tsp adobo sauce; s/p.

ASSEMBLY Center 2 large spoonfuls on 6 corn tortilla (first microed in damp paper towel 20 sec to soften); roll up.

FINAL Set seam-side down 8x8" sprayed baker. Blanket w/ can enchilada sauce, grated mozz, cheddar, jack.

Bake/melt 400 deg 15 min (til bubbly).

SERVE w/ guacamole, salsa, green salad. 1-2 margaritas wouldn't hurt.

My favorite appetizer to make for big parties:

Bacon Double Cheeseburger dip. There is nothing healthy about this appetizer but it’s the most delicious thing I’ve ever made!

1/2 pound ground beef
6 strips bacon, cut into 1 inch pieces
1 small onion, diced
1 clove garlic, chopped
4 ounces cream cheese, room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup mozzarella, shredded
1/2 cup cheddar cheese, shredded
1 tablespoon worcestershire sauce
2 tablespoon ketchup

I normally make a bigger dish so I double the ingredients

Cook the bacon, drain all but a tablespoon of the grease
Cook the beef in the remaining grease, drain
Cook the onions and garlic until soft, fragrant
Crumble the bacon, keep some to the side (for topping)
Keep some of each cheese to the side (for topping)
Mix everything including most of the bacon and cheese in a mixing bowl, move to baking dish
Top with remaining cheese and bacon
Bake 350 for 25m

It’s pretty thick so you’ll need strong chips to serve with. I use Tostitos Scoops.
