How many you need is how many it will hold, and still be easily concealable and comfortable. Your only real ally is surprise.
If it’s not comfortable you won’t carry it, and then for sure you won’t have enough rounds. My theory is you need to get the hell away from whatever the problem is. Not have a raging battle.

I have holsters similar to this one so I can have extra magazines.

As many as your gun will hold. Maybe extra.

Most defensive encounters involve 3 to 5 shots fired. Practice is very important as most handguns never see a thousand rounds fired through them.
Six consecutive rounds in a six inch target at 15 yards consistently is unusually good

This eventually takes us into the reliability vs. firepower debate. The revolver holds 5-6 rounds but is much more reliable. The semi can hold up to 18 in a double stack magazine but is not as reliable, especially when carried by someone who doesn’t shoot and/or clean their gun very often.

I carry a compact Star .45 with 7/1 and 7 more in my purse.
My ammo of choice is the Federal Hydra-Shok which is a hollow-point.
15 rounds should be enough.

Half-dozen rounds should be more than enough to get my butt out of harms way. I'm not sticking around.
