but here in the Northeast we have old school Eyetalians who came here (legally) for the free market opportunities.
Yuppers. It is no coincidence that ALL the national pizza chains started and thrived in parts of the country not known for pizza.
Pizza Hut, Wichita, Kansas
Dominos and Little Caesars, Michigan
Papa John's, Kentucky
Shakey's, California
Godfather's, Omaha, Nebraska

I don't know if it travels. Sally's Coal fired oven has been on for 70 years (he hired someone to keep it going when they went on vactaion).
A former Sally's employee started a small chain called "Wooster Street Pizza" and decided to do things his way, and add (I am not kidding) a California themed decor. It flopped. Even one-off's like the fantastic Angelo's in North Haven didn't survive Angelo's retirement for six months, as the new owners decided to improve on King Angelo and Nettie's formula. Tolli's in East Haven never recovered from Tolli's death from armed robbery in his own restaurant. The most overrated (but elder statesman) of the bunch, Pepe's, sold out to become a chain, to no great fanfare. The family didn't want to carry on, and what magic there was was lost, I fear. No one has tried to mimic Modern Apizza's formula, though they still make a great pie.

I should mention, Piece Pizza on North Avenue in Chicago makes a more than serviceable New Haven style pie. It comes with a sports bar atmosphere, but the apizza is the real deal if you can’t make it to New Haven.

There is one pizza place that’s part of a small chain about 5 minutes from me that makes the best ‘Boli I’ve ever had.
It’s loaded just right.
Every time I pick one up after I phone in, I ask the guy there not to change a thing.

I’ve never been tempted to go there. I haven’t been to Pizza Hut in decades. They screwed up our order three times in a row. I never went back. Mazzios also screwed up our order (actually they gave my pizza away to someone else). For a chain, Magic Mushroom does okay.

If you have one nearby, Costco sells a 18” pie in their food court for just under $10. I think it is better pizza than Little Caesars and for the price/quality, one of the best values.

There is a pizza joint here that was always the best in town. The owner sold out, but the guy that bought the place bought the recipe, and the pizza still tastes like it did in 1983. Yay! Belch!
