3 large sweet onions, chopped
1/2 cup butter, divided in half
2 eggs
3/4 cup Half and Half
2 cups grated Swiss cheese

I’ve made this recipe before, only with ramp instead of sweet onion. It’s very good, and you can use unsalted saltines or fresh breadcrumbs. Good with a nice big steak and a glass of cabernet. Mmmmm....

we make something like it, but layer in sliced par boiled potatoes instead of saltines. ahhmm....
Are you kidding me? ALL good southern vegetable casseroles have saltines, either in them or crushed and used as a topping.
Some of the best summer squash casserole on God’s green earth is made heavenly because of the secret saltines.
I’ve seen variations with crushed butter crackers (such as Ritz), too.
I’m thinking half onions and half green beans.
You could probably add well-drained browned sausage to that and have a whole meal. This reminds me a bit of a Cooking Light casserole I often make to rave reviews:

Sorry, this is the kind of recipe that explains why we have such a problem with obesity and heart disease in this country.
If you were in MN you would be putting potatoe chips on the casserole and there is always some cream of Campbell soup product used as a binder.....for dessert there would be a molded jello salad.....
