When man began eating meat, there was only one way to preserve it, and that was to dry it. Over time it became what we know today as "Beef Jerky".

Pork must be heated above “the lowest possible setting” in the oven. I know of people who have gotten trichinosis in Central America and it’s not a pretty sight.
